So instead of hummus, I made some white bean dip.

But I usually end up eating some sort of snack combo, like mezze with flax crackers and maybe a chipotle bean dip.

I love the idea of caramelized onions with white beans in this dip!

This black bean dip gets its delicious smokey flavor and slight kick to it from a bit of chipotle chili and adobo sauce.

That bean salad looks amazing too... reminds me of this delicious dip a friend used to make called cowboy caviar.

* Baked Tofu Trio: 1) slathered in BBQ sauce + baked beans + sauteed kale / greens / broccoli or 2) TJ's teriyaki sauce + rice / quinoa + roasted broccoli * Easy Fish: Dip fish in 1) a mix of equal parts lemon juice + honey + mustard then 2) panko or bread crumbs + thyme + s & p. Bake at 400 till done.

We cook up a pound or more of black beans and usually turn most of it into a bit of a mash w / frozen kale, tomato, onion, garlic and mexican spices, then we either use that for dipping nachos or for gooey black bean quesadillas (we try to freeze one pb jar full for a rainy day).

I made my dip with cream cheese, but if you're dairy - free, you can substitute with a can of white beans.

It's only a matter of time before someone comes along with a nine - layer dip, but we have to say this dip does look amazing, and keeps it vegetarian and healthy with a layer of black beans, as well as red peppers, veggie shreds, and a meat substitute.

Suitable for all ages, this recipe is a wonderful way of getting children to eat their greens (and beans), and no one can resist dipping some yummy bread into something just as scrummy.
