EDITED TO ADD: Alternatively, to lessen the appearance
of quinoa in these
muffins, blend all the ingredients in a higher powered
blender or food processor rather than mixing it all in a bowl.
After pouring out the batter in the wells
of a

blender, then add some soapy water and let it run for a few seconds.

These are just as easy to make as the rest
of my flourless
blender muffin recipes.
Several months ago I made Flourless Banana Berry
Muffins from oats instead
of flour and I really like them, so I went back to that recipe for inspiration and used old fashioned oats ground in the
blender in place
of flour.
I made
muffins by the way... Instead
of using flour, I made 1 cup
of oatmeal flour (1 cup
of oats pulverized in the
blender) and added also 1/2 cup almond flour.
In a high - powered
blender, combine white beans, pitted dates, banana, half
of the thawed strawberries (leaving the other half to be put in the
muffins whole), chia seed gel, and vanilla and almond extracts.
These oat - based
blender muffins have a slightly bumpy texture (as the
blender won't break up the grain completely) and are a bit less sweet than the average breakfast pastry — come on, if I wanted a piece
of chocolate cake, I'd just make that.

And back to the yummy
muffins — they're so easy to make, with only 6 ingredients (+ a dash
of salt) and they only take about 5 minutes to toss together ingredients like bananas, almond flour, and egg into a
blender; mixing it up for around 15 seconds to get everything all nice and smooth.
I'm obsessed with
blender muffins and I love the use
of oats here, the flavor combo sounds so good.
At first I was going to say I am most excited about making smoothies because the
blender I have isn't quite big enough to add a bunch
of fruit and veggies, (or powerful enough to really blend the harder stuff) But after seeing this post I now am pretty pumped to make breads,
muffins, and batters to bake things!
