3 to 4 ripe bananas, smashed 1/3 cup (75 grams) melted salted
butter 3/4 to 1 cup (145 to 190 grams) light

of sweetness you prefer, I always use the smaller amount) 1 egg, beaten 1 teaspoon (5 ml) vanilla 1 tablespoon (15 ml) bourbon (optional) 1 teaspoon (5 grams) baking soda Pinch
of salt 1 teaspoon (3 grams) cinnamon Up to 1/2 teaspoon (1) nutmeg Pinch
of ground cloves 1 1/2 cups (190 grams) flour
Melt plenty
of butter in a non-stick pan and sauté a few at a time until golden
brown on both sides, turning them gently.
Cream room temperature
butter and
brown sugar together for 5 — 8 minutes / Add egg & milk mixture (w / extracts) a little at a time until fully incorporated / By hand or with mixer
on lowest speed, alternately add flour and buttermilk until just incorporated — don't overmix at this point for the tenderest cake / By hand gently stir in 2 — 3 cups
of rhubarb sauce so that it swirls through the batter / Place in a 9 - inch square or 10 - inch round pan coated with just a little
butter and flour / Sprinkle evenly with chopped almonds (or, use local hazelnuts instead, or omit the nuts) / Bake at 325º for about an hour, until skewer comes out clean when tested / Macrina Bakery dusts the cake with powdered sugar and coarsely chopped almonds / Cake is tender until completely cooled so handle with care.
If you choose to toast the sandwich, simply spread 1 Tbsp
of butter on the outside
of the sandwich and grill in a pan over medium heat until golden
brown.
I replaced white sugar with the light
brown variety, and cut back
on it, too; I added a splash
of bourbon, salted
butter and then doses
of cinnamon, nutmeg and even cloves.
I just made it with a few alterations... rolled oats in place
of quinoa, all fruit
on the bottom and I made a
brown sugar crumble
on top (1/2 c flour, 1/2 cup
brown sugar, 3 tbsp
butter).
When the other side is

on side with no heat and brush with another coating
of butter lime sauce

on a greased baking tray for 30 minutes (during which the dough should double in size) 8) After the 30 minutes
of waiting time, bake in pre-heated oven at 180 — 200 deg cel for around 20 to 25 minutes (or until the crust is golden
brown)
You will begin to see amber -
brown specks form within the
butter on the bottom
of the pan.
In the bowl
of a stand mixer fitted with a paddle attachment, beat the
butter with the granulated sugar and
brown sugar
on medium speed for 2 to 3 minutes, until light and fluffy.
While the rainy days passed, I scribbled notes
of browned butter, a bit
of cream, maybe some shaved grano padano cheese
on top.
Then sprinkle
on the rest
of the
brown sugar and dot with
butter.
I made these with demarara
brown sugar because that's what I had
on hand, and although they are delicious, they are almost too sweet and the taste is overpowered by sweet instead
of peanut

In a separate bowl with an electric mixer (or in the bowl
of a stand mixer), beat the
butter and
brown sugar for about 2 minutes
on medium speed.
For quick breakfasts we often do a Bananas Foster oatmeal — the bananas mixed with a little
butter, vanilla,
brown sugar and walnuts cook up fast and I pour it
on top
of quick - cooking oats and can be popped into a thermos.
Smear the walnut
