Because pumpkin season is in full swing and I have a big bag
of buckwheat groats in my pantry, I figured it was time to make some overnight oats magic happen!
I bought a bag
of buckwheat groats, we tried them like a grain, but they just didn't work for us.
I picked up a bag
of buckwheat groats in an effort to try something new.
Similar to granola, but with the distinctive earthy taste
of buckwheat groats.
If you haven't heard
of buckwheat groats, you should try this.
She likes the earthy crunch
of buckwheat groats as a substitute for oats in granola, and she even eats them raw, as a snack!
2 cups
of buckwheat groats, soaked 2 - 4 hours 1 cup raw almonds (dried & activated if you have time — see note below) 1 cup pumpkin seeds 1/4 cup whole flaxseed 1 cup desiccated coconut 1tsp ground cinnamon 1tsp ground ginger 1 tsp vanilla powder pinch himalayan pink salt 1/4 cup pure maple syrup (see note below) 100g dried super fruits such as cherries, cranberries & blueberries
I'd bought a pack
of buckwheat groats a month ago, but apart from using it to make buckwheat porridge (in the same way you'd make oatmeal for breakfast), I didn't exactly know what else to do with the rest of the groats.
So, back to my pack
of buckwheat groats.
Just in case I walk you through the procedure: Take 425 grams
of buckwheat groats and soak them for 6 - 8 hours.
I followed the directions as listed with the following exceptions: I didn't have 4 shallots, so I used 3 plus 1/4 onion, I used dried currents instead
of buckwheat groats (love currents with cauliflower), and I added a tablespoon of butter (non-vegan) at the end to pull it together.
1/3 cup of raw almonds 1/2 cup of gluten free rolled oats — I used Bob's Redmill 1/3 cups
of buckwheat groats 1 cup of shredded coconut flakes 3 tablespoons of maple syrup Pinch of pink Himalayan salt
1/8 cup of milk 3 tbsp of whey protein powder 3/4 tbsp of coconut flour 1 tbsp of chia seeds 1/4 cup
of buckwheat groats 2 medjool dates 1 tbsp cocoa powder 1/2 to 1 tbsp coconut sugar
I now have a bag
of buckwheat groats so I'll be onto it this weekend.

And then I tried a raw version inspired by your recipe (I soaked the
buckwheat groats together with dried blueberries, whizzed it in a food processor the next morning and topped it with a drizzle
of peanut butter, maple syrup, hemp seeds and a sprinkle
of sea salt) and it was divine!
Hi, It is the
buckwheat greens that contains fagopyrin (a naturally occurring substance in the
buckwheat plant), the
buckwheat groats contain only trace quantities
of fagopyrin and are safe to eat.
This lovely, creamy blend
of mushrooms and
buckwheat groats is my kind
of meal.
The
buckwheat groats are a great gluten - free flour substitute and add a bit
of extra texture to the recipe.
As for the almonds in the crust, you can experiment with a 1/2 mix
of sunflower seeds and oats for example or
buckwheat groats would also work.
Between
buckwheat groats, almond flour, coconut flour, an assortment
of dark chocolate bars, rice cakes galore, and more nut butter that even I can get through, I have quite a bit to work with.
I looked for them awhile back but couldn't find them at any
of the big grocery stores we go to around here, so I settled for
buckwheat cereal, which is just the
groats ground down a bit more, but not all the way to flour.

Breakfast: low carb cinnamon swirl protein waffles, a caramel latte protein drizzle, some rawmio nut butter hiding to the side,
buckwheat groats for da crunchycrunch, and a scoop
of healthy cocoa dough Wink Desserts ice cream.
I think I might use
buckwheat groats instead
of nuts for some EXTRA crunch!

Topping this creamy soup with toasted cashews and
buckwheat groats adds just the right amount
of texture and crunch.
I love
buckwheat groats (I have several recipes on my blog if you look for some new ideas... it's delicious with miso for example and in general in many non-Polish recipes; try it instead
of rice in fried rice!)
(I don't know if you know, but, in spite
of what English sources suggest, «kasha» or rather «kasza» doesn't mean
buckwheat groats, but «
groats» in general, for example «pearl barley» is «kasza jeczmienna», semolina is «kasza manna», etc..

If you don't have any nuts or
buckwheat groats, granola or any trailer mix sort
of thing works well too.
A handful, or about 30g
of chopped nuts (or
buckwheat groats, as I used in my case since I didn't have many nuts lying around — sacrilege!)
It's a simple mix
of whole
buckwheat groats which I profess my love for here, and some melted vegan chocolate chips.
