I just finished my first attempt ever at making caramel and I'm not sure if its
burnt or not lol It got brown a lot faster than I expected, almost amber before the last few clumps melted, to the point where I really didn't even get a chance to swirl it.It doesn't really taste
burnt except for a little bit
of an after taste, almost
toasted tasting.Is that how it's supposed to be or did I take it a little too far?
I really LOVE dark (practically
burnt) marshmallows, there is no mistaking the flavor

I really like the idea
of just having to bake it in the morning — and having it all done at once (A couple
of days ago I was making a standard type
of French
toast, cooking the slices individually, and ended up
burning it somewhat because I had to take a phone call.
I usually add minced garlic to these because I love the bits
of garlic that get really
toasted — even a little
burned — in the oven.
Remove from the heat as soon as you smell a hint
of toasted sesame; if you let them go much beyond that, you'll start smelling
burned sesame - not good.
I know some people like to
toast flours in the oven, but I find
toasting them in a large skillet gives me more control, resulting in even browning, less occurrences
of burning.
