From our Power, Probiotic and Reset Jars you can probably guess we're big
fans of chia pudding for breakfast.
This time I wanted to make a more fun, tricked out
version of chia pudding flavored with pumpkin and topped with creamy coconut milk and bittersweet chocolate.
To make the parfait I first added a
layer of the chia pudding in a glass, topped it with blended persimmon and a banana blueberry smoothie, which consisted of 1 bananas and a big handful frozen blueberries.
You can just pop the serves
of chia pudding in separate jars, and top with peanut butter and cacao nibs.
I am most curious about your breakfasts, I do a
lot of chia pudding with coconut milk (homemade) or nutmilk.
The best part is you can let the chia seeds do their thing in the fridge overnight, and wake up to pudding in the morning It's easy to make a big
batch of chia pudding and have your breakfast for the week.

bowl of chia pudding and raw chia jam mixed with flavorful fruits and granolas!
I've been a fan
of chia puddings for quite some time as they make the easiest grab - and - go breakfast options, and there are so many flavour options!
2Once your mix of coconut milk and chia seeds is ready pour your chia pudding into a bowl and start preparing your bowl, add the other half of your passion fruit on
top of the chia pudding, the blackcurrants, the redcurrants and some fresh chopped mint.
Like others I begin hydrating the day before with extra water, no drying foods and at least two
servings of chia pudding, (3 T each plus water).
Pour a little
of the chia pudding into ramekins or small jam sized mason jars, layer bananas, a sprinkling of cacao nibs and pomegranate and repeat.
Start with a thick layer of berry compote, then add about 2
tablespoons of the chia pudding, a layer of colony yogurt, the peanut butter, more berry compote and more chia pudding.
And I kid you not - the
quality of chia pudding homemade almond mylk makes is so chef - worthy it will change your breakfast game.
Try doing two different smoothie flavors, layered in a glass, two
types of chia pudding, or this mango - layered version.
I made a slightly different
breakfast of chia pudding yesterday for a change, as it was what I fancied, and I hadn't soaked any grains over night!
If you are one of those people who isn't a fan of the «frog spawn» like
nature of the chia pudding then simply place in your food processor for a good 5 minutes until it resembles something much more like that familiar pudding like texture we all used to love as kids.
If you run into «texture trouble» with someone who doesn't enjoy the tapioca - type texture
of the chia pudding bottom layer, you can also just as easily mix the same amount of seeds in with the fruity layers & blend it so it disappears.
This Pumpkin Spice and Pecan Chia Pudding is an extension of my
love of chia pudding... and of course, pumpkin!
If 33 is my brink of insanity, then I need to stick to a workout schedule... and start replacing my Ben & Jerry's with way
more of this chia pudding.
As the weather has warmed up again, colder breakfasts have started to appeal once more so I have been creating different
flavours of chia pudding, bircher muesli and smoothie bowls!

Notes: If you don't have an extra ripe banana and are craving the heck
out of some chia pudding, you can use this recipe, instead.
Though you'll find
tubfuls of chia pudding at your local health food store, it tastes especially good when cut with another texture like the yogurt here.
No matter what
kind of chia pudding I'm making, I tend to add either two tablespoons of toasted buckwheat or flaked quinoa to make it extra filling.
I'm not too
fond of chia pudding, because you really have to chew it, but I've never tried to grind the seeds before.
My normal
rotation of chia pudding, warming grain cereal with coconut yogurt and fried egg sandwiches with avocado and hot sauce on sprouted bread is getting a little repetitive.
