I made a sweet treat out
of chocolate almond butter.
I've been seeing jars
of chocolate almond butter available on grocery store shelves for several years now, but I've never been able to justify spending $ 10 + dollars to try one — especially when I'd probably devour most of it in one sitting.
I'm a big fan
of chocolate almond butter smoothies — so good!
I'm an almond butter fanatic (well, nut butter of any kind), and I've yet to make a recipe
of chocolate almond butter cookies.
To be honest, the flavor reminds
me of chocolate almond butter and after this video we all know how much I love that stuff.
The result is a combination
of chocolate almond butter and real (vegan) chocolate chip cookie dough chunks.

chocolate is so amazingly rich with subtle hints
of salt and fresh vanilla, which really compliments the creamy
almond butter filling.

of almond butter for the
chocolate mousse.
Take the moulds out the fridge and scoop some
almond butter into the centre
of each one before covering them with another spoonful
of chocolate.
For example at home Ella and Matthew eat lots
of bowls

almond butter, warming veggie stews with lots
of spices served over brown rice, chocolatey energy balls and rye toast with honey, but when they go out Matthew loves a pizza followed by ice cream with extra

Also, one variation I like doing is Mexican
chocolate, by adding 1 - 2 Tbsp
of almond butter and a 1/4 tsp
of cinnamon (or more) to the wet mix and mixing thoroughly.
Once the
almond butter layer is set, pour on the rest
of the
chocolate (if it hardened a bit, you can microwave it briefly until it's pourable again) and refrigerate until set.

These bars have a
chocolate almond base and are topped with a decadent layer
of almond butter.
I was inspired to make this Crunchy Cacao Nib

Drop 1/2 tablespoon
of Maranatha Maple
Almond Butter at a time on top
of each frozen / hardened
chocolate cup.
On top
of all this
almond butter perfection, we're adding
chocolate chips.
These are a soft cakey cookie (more like a mini muffin) that really does taste like banana bread with the addition
of almond butter, oats, and
chocolate chips.
Divide the
chocolate liquid in half and reserve one half for the «top layer»
of the
almond butter cups.
After
almond butter has been dropped into each cup, pour the remaining half
of the
chocolate until filled to the top and
almond butter is covered.
These
almond butter cup cookies are a way to recreate the taste
of classic peanut
butter and
chocolate cups without falling off the Paleo wagon.
