Everyone in my family loves it, even the ones who aren't a big fan
of coconut cake.
It's Monday, I'm in a chocolate - peanut butter egg coma, I've got a full day of work, bruises on my knees from falling on my face in the Target parking lot (it would happen there) and half
of a coconut cake left in my fridge.
We put our name in at Poogan's Porch for dinner and then walked a couple of blocks to grab a piece
of coconut cake from The Peninsula Grill to enjoy for dessert.
I was facinated by the history
of this coconut cake and decided to make it today.
I wrote about a different version (without leavening)
of the coconut cake recipe which Emily received from Mrs. Carmichael.
Everyone in my family loves it, even the ones who aren't a big fan
of coconut cake.
Emiy is my 6th cousin 4x removed — but I know that ALL of us who love Emily feel like we are part of her family, welcomed into her Soul whenever we tend our gardens, read her poetry, and partake

cake is the perfect size but I wonder if I add
coconut will that change the moisture balance
of the recipe?
They're using the classic mixture
of almond flour and
coconut flour together to get the muffin part right, and they have plenty
of carrots, nutmeg, cinnamon, and more to get the carrot
cake part right.
Not to say the filling isn't surprisingly low in fat — free
of cashews and

It's easy, festive, a perf variation
of the classic birthday
cake, rich, affordable, and the
coconut whip ties it all in together.
The
coconut is a pretty big part
of this
cake.
Bake the
cake (or cupcakes) as directed on box (I used
coconut oil in place
of the butter, and almond milk in place
of regular milk, and 2 eggs) yield is around 34 mini cupcakes
I made
coconut whipped cream (just chilled canned
coconut milk whipped with some maple syrup) and topped the brownie with the cream and strawberries... made it more
of a
cake than a brownie.
Or is the
coconut oil supposed to give the
cake a taste
of coconut?
I have always just used the recipe off the back
of the box
of German chocolate, which is what my mother always used, and it is good, but I can't say it's «great» (it's hard for me to call this
cake great anyway, since I do not like
coconut and am mildly allergic to pecans.)
Bake for 45 minutes or until the top
of the
cake is puffed and golden, a knife blade comes out nearly clean, and your house smells like a
coconut palm grove.
Line muffin pan with paper liners - In the bowl
of an electric mixer, whisk together the
coconut milk, sugar, oil, and vanilla extract - In a separate bowl, sift together the flour, almond meal, cocoa powder, baking soda, baking powder, and salt - With the mixer on low - speed, slowly add the dry ingredients to the wet until mixture is uniform and smooth (do not overmix)- Pour batter in liners, filling cups no more than 2/3 full - Bake 18 - 20 inutes, or until
cake tester comes out clean - Transfer to a cooling rack to cool completely
