of my youth, with offerings like Filipino - style spaghetti (it's a bit sweeter than what most Americans are used to) and «Halo - halo» (literally translated, «mix - mix»), a delicious dessert made up
of shaved
ice, evaporated
milk, fruit,
coconut,
ice cream... and boiled sweet beans.
I recommend throwing a chunk
of these brownies to your smoothie or layer in a parfait glass with
ice cream made from Ella's recipe or as I do — I make mine in the
ice cream machine using full fat
coconut milk instead
of cream and traditional
milk..
Have you ever heard
of the quick soft serve
ice cream technique, where you freeze
coconut milk in
ice cube trays and then blend the cubes with fruit, sweetener, etc. into into a perfectly spoonable frozen treat?
Using
coconut milk yogurt and
coconut cream instead
of classic yogurt this pud is dairy free and lighter than a usual
iced yogurt.
Once the
coconut milk mixture has chilled, pour into prepared
ice cream machine and churn 10 - 15 minutes until beginning to thicken, then slowly drop in the cookie dough bites, allowing the mixture to churn another 5 - 10 minutes until the consistency
of soft serve.
Then, once cooled, you literally tear it up (note the bowl
of cake bits above), knead in some chilled
coconut milk (yep, that's that
ice cream looking blob on the cake bits), and roll into bite - sized balls (see above).

This particular version is dairy - free, made with
coconut milk instead
of a combination
of whole
milk and heavy
cream (though certainly those ingredients could be substituted in to make a more traditional
ice cream).
Wet ingredients: 4 tbsp vegan butter, melted — or you can use
coconut oil 150 ml plant - based
milk of choice, warmed 7g sachet
of yeast 3 tbsp
coconut sugar — or you can use brown sugar Vegan

My fav flavor is the purely decadent
coconut milk mint chip
ice cream... oh and the chocolate peanut butter swirl which CHUNKS
of peanut butter....
Also, Purely Decadent makes a dairy and soy free
ice cream made with
coconut milk — there are a whole line
of flavors available.
I used vanilla bean
coconut milk ice cream — but I bet any
of the Ben & Jerry's non-dairy
ice cream flavors would be supper yummy!
I only use an entire can
of coconut milk for sauces or
ice cream.
We make a lot
of ice cream at home and I just made matcha with
coconut milk yesterday!

of our family summer activities involve getting outside in the heat and humidity, I decided an inside project
of learning to make
coconut milk ice cream would be a fun break.
Coconut milk, cloves, alcohol - free vanilla and
of course, fresh grated ginger and diced peaches are what makes this
ice cream so irresistible.
This
coconut milk ice cream recipe is similar to my original butter pecan
ice cream (a family favorite), but makes use
of the gorgeous seasonal strawberries that are available right now and is completely dairy free.
For even creamier
ice cream, you can use
coconut cream instead
of coconut milk.
A simple mix in a blender with
coconut milk, a bit
of espresso powder, sugar and vanilla extract and your
ice cream is ready to go into your
ice cream machine.
Well, how convenient that I just made
coconut milk ice cubes (due to the icky, grainy texture
of the
milk)... I see some
ice cream in my future!
For
ice creams that aren't fruit - based,
coconut milk will make up the largest volume
of your ingredients.

So, instead
of giving you a specific recipe for «how to make
coconut ice cream,» I thought I'd fill you in on all
of the tips and tricks I've learned so that you can develop your own recipe, or adapt a recipe that currently includes cow's
milk.
And now I'm picturing some sort
of ice cream made with these ingredients and blended with
coconut milk or
coconut cream then put in the blender.
Never thought
of using
coconut milk in
ice cream, but it sound delicious!

If you're going to make fruit flavored
ice cream, I recommend replacing one
of the cans
of coconut milk (13.5 ounces) with 16 ounces
of coconut yogurt, as it lends the perfect amount
of tanginess to the
ice cream.
