In making this cake I used cultured
coconut milk (it used to be called
coconut kefir) in place
of the buttermilk.
Like regular
milk kefir,
coconut milk kefir is made by using
milk kefir grains to ferment the
coconut milk, but
of course it is dairy free.
I asked my friend Hannah
of Kombucha Kamp to answer some
of the most commonly asked questions about making
coconut milk kefir.
In our experiments, we found that after 3 days, 2 cups
of coconut milk with 1 Tablespoon
of kefir grains had a refreshing, lightly tangy aroma.
We found that it took around 7 weeks
of regular fermentation in dairy
milk to fully recover
milk kefir grains so that they would reproduce after having been used to ferment
coconut milk for 2 weeks.
But one day while making regular
coconut milk kefir, I accidentally dumped my water
kefir grains (instead
of the
milk kefir grains) and about 1/4 cup
of pre-made water
kefir into the wrong container.
If you follow a paleo friendly ketogenic diet plan and avoid all dairy, you can still enjoy the health benefits
of probiotics and enzymes by making
kefir from
coconut milk.

Examples
of probiotic foods you should look to consume include: fermented vegetables (sauerkraut, kimchi), probiotic yogurt (from goat or sheep
milk that is grass - fed and organic), fermented dairy products (
kefir), probiotic beverages (apple cider vinegar,
coconut kefir, kvass), kombucha, natto, raw cheese (goat's
milk, sheep's
milk, A2 cow's soft cheeses).
You need to reactivate and store the
kefir in
milk between batches
of coconut kefir, but it is delicious.
You can use shortening or butter in place
of coconut oil, and almond
milk, dairy
milk, or
kefir for the
coconut milk.

I suggest you put the
kefir grains in real
milk for a week to get some growth then switch half
of them to
coconut milk for slow growth, or to
coconut water for no more growth.
But you can also use (i) regular cow's

coconut water or (iv) try using 1/2 — 1 cup
of natural yoghurt or

Coconut Milk Kefir.
I am not a huge fan
of drinking
coconut milk straight up, but I have made
coconut milk kefir which is delicious.
Coconut milk kefir, on the other hand, has about 30 beneficial strains
of bacteria and yeasts.
Since then many
of you have asked me for a recipe for
coconut milk kefir and I finally getting around to posting it.
I make my own
kefir out
of coconut milk.
You can use almost any kind
of milk to make your
kefir, and if you do use water or
coconut milk (or water) your
kefir will most likely be much thinner than if you use a
milk.
But if I have 2 organic eggs and 1 tbsp
coconut oil - and maybe a glass
of raw
milk or raw
kefir - I'm high energy until lunch time.

The benefits
of milk based
kefir exceed those
of water
kefir no matter if the water
kefir is cultured with fruit juice, vegetable juice,
coconut water, or filtered water and a whole sweetener.
Water
kefir, just like
milk kefir, utilizes a beneficial culture
of microbes that consume the simple sugars in the juice,
coconut water or sugar water base to create a plethora
of probiotics.
You can buy water
kefir grains and put them in
coconut milk (best if you make it yourself by simply blending the meat
of one
coconut with the water
of one
coconut together in a powerful blender).

of bacteria in
