For some
of them, I did the same thing I did last year, where I had a layer
of cupcake, then ice cream (
sorbet in this case), then frosting (again, I used up some
coconut cream cheese frosting I had in the fridge).
And as
of this morning we've made a grapefruit
sorbet and a
coconut ice cream.
One
of my favourite
coconut products is Ciao Bella's
coconut sorbet (http://www.ciaobellagelato.com/flavors/flavors.php?id=303).
A box
of ripe mangos was waiting for us when we returned home from traveling, so the wonderful Mango Chili and
Coconut sorbet was created.
* I've also made this with
coconut sugar, but the
coconut sugar is such a dark color it makes the
sorbet brown instead
of yellow.
But it added some nice little chunks
of coconut into the actual
sorbet.
Coconut Sorbet is a famous island treat, especially around Old San Juan, Puerto Rico where street carts vendors offer frozen scoops
of Coco as a refreshing antidote to the tropical heat.
If you want something more towards the
sorbet / sherbet end
of the spectrum, use less
coconut cream.

Finally, the tepache float (fermented pineapple soda over
coconut sorbet) is one
of the most delightful desserts we've had in a long time.

Sorbet recipe made with Froozer frozen fruit snacks, plus a bit
of frozen banana, light non-dairy milk, and a garnish
of coconut flakes for a nice garnish and dose
of tropical goodness!
This fruit
sorbet recipe from Hannah is full
of fresh and nutritious fruit and just a bit
of liquid
of your choice (like
coconut milk).
They were light and healthy, and I ended up eating them daily along with steaming bowls
of pho, stir - fried noodles, and delicious
coconut sorbet.
