1) Sift self - raising flour into a large mixing bowl 2) Cut the butter into small cubes and mix it with the flour, using two knives to mix the butter and flour together 3) Once the dough achieves a sand - like mixture, use your hand to compact the dough and knead very gently 4) Sprinkle a cool, flat surface with flour, and flatten the dough with a rolling pin until it reaches a 1 cm thickness 5) Pre-heat oven to 190 — 200 deg cel 6) Use a round cookie cutter (or a champagne glass) to cut out small circles
of dough 7) Place dough circles on a greased and floured baking tray 8) Bake
scones for 15 to 20 minutes or until they have turned golden brown on top 9) Once
scones have cooled, cut them sideways into half 10) Mix chopped fresh chives and
cream cheese together until they have integrated homogeneously 11) On each
scone half, spread some
cream cheese and chive mixture, then place a couple
of slices
of ham and cheese on top, then top with more
cream cheese mixture and finally sprinkle with fresh chives
In my opinion, the chives and
cream cheese mixture which come next made the
scones shine; generous toppings
of cream cheese and fresh chives brought these
scones to another level.
What I had in mind were simple cocktail snacks, and the menu included tomato and onion bruschetta; carrot and celery sticks with a delicious
cream cheese dip; cheese and salami; and finally, for the star
of the meal, homemade
scones topped with slices
of ham and cheese, and finished with
cream cheese and freshly chopped chives.
Apricot with almond is one
of my most favorite flavor pairings, and combining the two into a lovely
cream scone is simply the best.

If you are a fan
of afternoon tea, such as I am, you might agree that the best part
of said afternoon tea is the
scones with
cream (such as the chocolate
scones pictured above).
One
of the defining things about our friendship is our undying love
of tiny sandwiches,
scones with jam and
cream, and tea, and we often celebrate the milestones in our lives by going out for afternoon tea.
Service includes a properly brewed pot
of tea; a glass
of sherry, sparkling wine or specialty cocktail; a selection
of English tea sandwiches;
scones with clotted
cream; and a final course
of gourmet desserts.
Lather it on
scones, whipping
cream biscuits, or a slice
of warm bread.
I don't reserve
scones for just special occasions, they're an every day favourite in my house, but every now and then it's nice to «dress them up» with a selection
of jams, clotted
cream and perhaps some strawberries too to make a quintessentially British treat!
Toffee
Scones 2 cups all - purpose flour 1 tablespoon granulated sugar 1 tablespoon baking powder Pinch
of salt 6 tablespoons butter, cold and cubed 1/2 cup heavy whipping
cream 1 large egg 1 cup chocolate toffee pieces
Plenty
of bakers use heavy
cream in their
scones, but I almost always go for half - and - half.
My old standby would definitely work here, but the extra fat in heavy
cream helps the middles
of these
scones to be super tender.

For these strawberry
scones I've used buttermilk instead
of heavy
cream.
Kept the
scones perfectly moist while adding just the right amount
of vanilla flavor, hence the
cream portion
of strawberries and
cream scones.
While the
scones cool, make the
cream cheese frosting by placing all ingredients into the bowl
of a food processor and blending until smooth.
And a dollop
of coconut
cream that's been chilled in the fridge makes a delicious topping for cakes,
scones, pies and tarts.
And a plate
of freshly baked fruit and plain
scones with Cornish clotted
cream, fig and strawberry jam.
Using a pastry brush, brush the tops
of the
scones with a little
cream or milk.
• Make sure to use a type
of coconut milk that doesn't have added thickeners for the best results (in both the
scone and the whipped
cream).
Place the other half
of the
scone on top and then add the remaining
cream and strawberries.
Note: Can use light
cream, half - and - half or milk instead
of heavy whipping
cream for a lighter
scone.
Brush tops
of frozen
scones with
cream, and sprinkle each with a hefty pinch
of coconut sugar, if desired.
And by true
scone, I'm thinking
of a classic British
scone: those slightly sweet and rich creations made with
cream.
* 6 ounces almond flour (I used Bob's Red Mill brand, and for those who prefer to measure in cups, this was just under two cups) * 3 ounces coconut flour (I used Bob's Red Mill brand, and this was equal to 1 cup) * 2 teaspoons baking powder * 1/2 teaspoon fine sea salt * 1/3 cup raw, organic cane sugar plus another 1 - 2 teaspoons for sprinkling on top

scones before baking * 9 ounces organic coconut milk (I used organic, unsweetened full - fat coconut milk from Native Harvest, and I stirred it very well to mix in the

cream, etc. etc and I love them them all...
As you head into Northern Hemisphere winter, can I recommend afternoons with cups
of fine tea and
scones slathered with jam and
cream?
Biting into one
of these fabulous

cream cheese icing will make you smile and bring the sunshine indoors.

Now one

This isn't really a stiff sort
of vegan whipped
cream, which often has powdered sugar added for structure, but it's perfect for piling onto cakes, topping coffee, or serving with
