I liked the idea
of cucumber salsa, but I was a tad nervous to taste it for fear that it would taste like, well, cucumbers.

It was absolutely fantastic and we would eat endless pots
of beans and totopos, eggs, orange wedges,
cucumbers, jicama, soups, you name it, this
salsa was the excuse to prepare anything and everything.
I love fish tacos but I've never thought
of making
cucumber salsa before and I have so many
cucumbers this time
of year.
To play up the Greek theme, a «

cucumbers, grape tomatoes, and olives, simply tossed with a splash
of olive brine, is the perfect topper.
