In a large bowl combine sweet potatoes, tablespoon of olive oil, teaspoon of paprika,

Nancy uses the famous Chief brand Amchar Massala, but a good substitute is to roast 6 tablespoons of coriander seeds, 1 teaspoon of fenugreek seeds, 2 teaspoons of fennel seeds, 1 teaspoon of mustard seeds, and 1 1/2 teaspoons
