I think a good baseline for the breakfast kale smoothie would be kale, apple, almond milk (or any other
type of dairy free milk) and some protein like nuts / nut butter.
Do you think I could use Rotel tomatoes (or the juice from a can of Rotel tomatoes strained) instead
of the dairy free milk in order to make it similar (I know cheese wise it won't be really that similar) to the old velvetta / rotel dip?
For the coffee cakes that call for sour cream or yogurt inside, you can replace that with some cauliflower puree (steamed blended cauliflower), with a slight zest of lemon juice and a
dash of dairy free milk inside of it, you can even achieve a bit of the dairy «sour» taste.

You can use either shop bought Almond Milk for these almond milk smoothies or homemade almond milk, and if you can't get hold of almond milk just use any type
of dairy free milk that you can find.
(Note: if you want to make it more creamy you can add a few splashes
of dairy free milk).
