It's light and lemony with lots

1/2 cup ketchup 1/4 cup hot sauce (such as Frank's) 1 teaspoon liquid smoke 2 teaspoons olive oil 1/2 cup chopped onion 8 ounces chickeny seitan, cut into 1/2 inch cubes 2 cups quartered cremini mushrooms 1 1/2 cups
arugula, julienned 2 carrots, shredded 1/2 cucumber, diced 1 Crisp Pizza Crust Ranch
Dressing of choice *
Toss spinach (or kale or
arugula), carrots, coleslaw mix (or cabbage) and 1/2 cup
of the
dressing with the quinoa.
I loved the explosion
of citrus flavors — tangy oranges, sweet mandarin oranges and slightly sour grapefruit — on a bed
of fresh
arugula leaves,
dressed in lemon vinaigrette, and garnished with fresh mint and horseradish.
While I was chopping it up, I had the idea
of tossing it into some
arugula, mint and citrus
dressing.
But if this dish will be served on the table at a large holiday party where it will be sitting out for a length
of time, I recommend doubling the salad
dressing recipe and serving the
dressing on the side to prevent the
arugula from wilting too much.
There are times when you want the tart flavor
of a balsamic vinaigrette to
dress your peppery
arugula, and there are other times when you want a thick, rich salad
dressing that doesn't exactly scream healthy food.
Scoop all
of the zucchini and fennel onto the
arugula, and pour most
of the lemon juice
dressing on top
of that.
The grape
dressing is delicious and the flavors
of roasted almonds,
arugula, grapes, and parmesan or Romano or machega (which I don't personally like) blend superbly.
Farro Salad: I did this as a side for Thanksgiving - combine farro, lots
of toasted seeds, and plenty or
arugula in a large bowl and toss with a generous amount
of the ginger carrot
dressing.
