And then I got a bunch
of dresses for summer (I was in my mid-second to third trimester in spring / summer).
Even then I wear casual trousers and jackets and add in lots
of dresses for summer.
In the meantime I'm going to eek out the rest
of dressing for summer for as long as the weather cooperates.

I'm a bit
of a traditionalist with tomatoes usually, but
for a special
summer gathering, I will take a thin french loaf, slice and grill it into little toasts, put a slice
of Roma tomato, Basil leaf (purple if you have it) a thin slice
of melting cheese (mozzarella is my fav), pop into the toaster oven or broiler util browned, then top with some flaked tuna in a wasabi

of onion and celery.

It's a light, lowfat — not usually my favorite food criterion — and refreshing
dressing for summer greens or a bowl
of thinly sliced fennel, oranges, avocado and red onion, which, speaking
of myriad possibilities, is also delicious
dressed with orange or lime juice, olive oil, salt & pepper.
I then opted
for a salad since I had so many cherry tomatoes from my late
summer garden harvest (these really cooled down the heat

dressing which I appreciated).
Amongst my plate: tostones [Cuban fried plantains with black beans + sour cream], tofu nut balls + tofu tahini
dressing, vegetable potato latkes, lemon + herb shrimp, fava bean spread, caprese toasts, dolmas, puff pastry and filo dough - wrapped asparagus, and a piece

My grandma used to make them in the
summer to enjoy year around ~ My Mom made just a few pints
of them in the
summer ~ she used to use red and green food coloring, (even number
of pints in each color), along with the red & green cherries in the pints, so as to
dress up the pickle plate
for Christmas dinner and through out the Holiday season!
