dried ones I let 5 - 6 soak in water for a bit.

When I'm flying with my kid I usually pack: a baggy
of Canaan's current favorite cereal (either Rice Chex or now it's pumpkin Joe's O's), LaraBars, Rx Bars, or Perfect Bars,
dried coconut strips, apple slices, celery or carrots, homemade Easy Protein Energy Bites, a
banana and Justin's vanilla almond butter packets and sometimes a small container
of rinsed chickpeas.

If your batter becomes too
dry because
of the different size
of bananas then add about 1 - 2 tbsp dairy free milk to the batter while whipping up.

Here's the cookie recipe using applesauce in place
of the
banana and
dried fruit in place
of the chocolate.
Whisk in
bananas, eggs and 2 tablespoons
of the oil, then gradually whisk the wet ingredients with the
dry.
Once your
dry and wet ingredients are all ready, place the
banana slices on the bottom
of your prepared baking dish until the bottom is completely covered.
They're super moist; light & fluffy; have tons
of flavor from the
bananas, cinnamon & vanilla; and they never taste
dry or bland.
Try
dried blueberries, cranberries, or raisins in place
of the
banana — they offer a nice chewy texture.
