of the flours, equaling 170 g,

eggs), liquid (the milk and lemon juice) at 70 % would be 220g, and the fat (butter) at 37 % would be 113 g. It's a specific ratio, but it worked for this jam filled
muffin, and I was happy with the results.
I baked them on my pizza stone with a
muffin tin full
of water on the bottom (I did the
egg wash and sesame seeds per the recipe on only half, but will definitely do for all next time) and poof!

To make regular cornbread or cornbread
muffins using the Homemade Cornbread Mix, add 2 cups
of the mix, 1/2 stick (1/4 cup) melted butter, 1 cup 1 % milk, 2 beaten
eggs and 1/4 cup honey to a large mixing bowl and whisk to combine.
- Preheat oven to 350 degrees and line 1 pan
of regular
muffin tins and 1 pan
of mini
muffin tins with cupcake liners (I only used 8 regular sized and 8 mini
muffins for the bouquet)- Add the cake mix, buttermilk, oil, almond extract, and vanilla extract to an electric mixer and mix on medium for 30 seconds - Add
eggs one at a time and beat until well mixed - Turn mixer to high and beat for another 2 minutes - Fill liners about 2/3 full with batter - Bake for 15 - 20 minutes, or until cake tester comes out clean - Allow cupcakes to cool while preparing the cream cheese frosting

muffins for breakfast today.
Some
of their favorites are the
egg muffins and the cocoa puffs.
The only change I would make to this dish is I would leave the English
muffins whole and arrange the ham and green onions on top
of them and pour the
egg mixture over and around them.
Lately I've been making a big batch
of scrambled
egg muffins on the weekend for little man to enjoy for breakfast at school.
Two
of my favorite breakfasts are healthy
egg muffins (where I literally throw whatever I find in the fridge into the
egg cups) and chia pudding that I top with fruit and nuts.
I put a half English
muffin into a personal size aluminium pie plate, crack an
egg onto it, fresh ground pepper, a few sprinkles
of whatever cheese (cheddar, mozarella, provolone), add some chopped crispy bacon or sausage bits, bake till done.

My problem with a lot
of Paleo baked goods is that they do use a lot
of eggs (
muffins in particular).
Giving English
muffins a soak in a bath
of whisked
egg and milk and then pan «frying» was the perfect solution.
Our favorite go to breakfast is an
egg muffin, an paleo banana
muffin, and bacon with a side
of kefir to drink.
These sweet little «
egg muffins» will be one
of the first items in your buffet line up to go.
One
of my go - to healthy breakfast for my daughter is scrambled
eggs baked in a
muffin tin.
* I love quiche and frittata and those baked
egg muffins when they are fresh, but after a couple
of hours or a stay in the fridge, the consistency changes and I'm not as excited about round 2.

egg muffins can be a little tricky to take out
of the
muffin pan, so be sure to grease it well using cooking spray or oil (I find cooking spray works better).
On the other hand, 12
muffins use up only 2
eggs and 1/4 cup
of butter, so I guess that may qualify them to be low - fat?
Sixteen grams
of protein in each breakfast
egg muffin will keep you satisfied until lunchtime.
