Squash and Crispy Sage Risotto is one
of my favorite

Squash arrived on my doorstep and after a brief but intense evening
of roasting and tossing and eating, I have
fallen in love.
Roasted butternut
squash is really tasty and has definitely become one
of our favorite
fall flavors.
Butternut
squash is the true sign
of fall, just like apple cider and pumpkins.
But the recipe still worked out; the remaining unburnt jam had cooked down with the milk and sugar into a deliciously caramelized mixture
of tender mashed butternut
squash - with a smoky
fall flavor all its own (hopefully not due to our burning the bottom
of the milk!)
I'm afraid this roasted acorn
squash and quinoa bowl is about the extent
of my seasonal fair this
Fall.
With the changing
of season, we are also seeing
fall vegetables like
squash.
I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along with carrots, celery, onions and garlic, I usually use 3 - 4 cans
of (low sodium, rinsed) beans (2 kidney, 1 each
of another; I like black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the
fall / winter); 1 or 2 zucchini and / or yellow
squash, and (drum roll) 1 can
of organic PUMPKIN PUREE!

of my favorite
fall vegetables is HANDS - DOWN the Butternut
Squash.
It's
Fall Foods Galore this week for #SundaySupper, so you know what that means — apples, pumpkins pears,
squash, and all sorts
of comfort food as the air starts to get a little crisp.
One
of my very favorite parts
of fall is
SQUASH.
Kelli who made a
fall themed strudel with butternut
squash, caramelized onions and kale is the winner

Well, I've managed to spend most
of the post talking about my random views on farmer's markets when I really wanted to point out a couple
of my favorite
fall products —
squash and apples.
Winter
Squash, White Bean, and Spinach Sauté is a simple
fall dish with loads
of versatility.
These roasted maple acorn
squash and turmeric cauliflower buddha bowls are packed with some
of my favorite
fall flavors.
Thyme roasted diced butternut
squash, apple and onion make me think
of Fall and stuffing, two
of my favorites.
Fall should never end, if only for the food reasons: pumpkin, Honeycrisp apples, every kind
of squash available and an abundance
of fresh Brussels sprouts.
Pair incoming
fall produce like spaghetti
squash with end
of summer tomatoes and basil for terrific in - between season meals.
Seriously, pumpkins «
fall» into the autumn / winter
squash category and we grill other varieties
of squash but don't consider pumpkins.
Winter
squash can be kept for a long time in cool storage, so buying cases
of squash in the
fall and storing them will stretch your food budget and stock your pantry with nutritious goodness.
Slightly spicier than kale, the mustard greens added a nice kick, nuzzled up against warming butternut
squash, and complimented with the sweet, rich flavor
of caramelized onions, this frittata is a great way to celebrate
fall produce!
And the technique for peeling butternut
squash is a winner - I discovered it myself this
fall (after years
of only roasting butternut
squash whole so there was no need to cut into one or peel one) and it really is that easy.
I'm no longer obsessed with the myriad
of fall flavors, its
squashes and medium - body soups and wines, I just want to stay warm.
Because
of the high water content,
squash will become mushy and possibly
fall apart if cooked too long.
I obviously had to stick with something semi-healthy, but still full
of comforting
fall flavors, so I made a quinoa risotto with mixed mushrooms, roasted butternut
squash and lots
of parmesan cheese.
