I haven't tried
freezing the egg
muffins yet, but I bet you could make big batches
of them and thaw them out the night before for gatherings.
The recipe in the book makes 12
muffins, but I decided to reduce the amount
of ingredients so I'd get 3 - 4
muffins, because I'm not quite sure if I could eat 12
muffins (well, yes I could) and I can't
freeze them because my freezer drawer is full
of other goodies I have yet to share with you.
I reserved one tablespoon
of the mixed dry ingredients, and just before baking the
muffins, I tossed the reserved dry mix with about 1/2 cup
frozen blueberries and folded them very gently into the batter.
Because I didn't trust myself around the second batch
of muffins, I immediately
froze them for an on - the - go breakfast or afternoon treat.
You could also make a large batch
of these
muffins and
freeze them, then heat them up in the toaster oven (NEVER the microwave!).
