Please do squeeze all the liquid out
of the grated courgette before you add it to any baking batter.

of the excess water in it — do not skip this step as it will stop your muffins cooking properly.
Also, I used marrow instead
of courgette as that is what I had - I did squeeze some
of the juice out
of the

grated courgette in stead
of applesauce and someone else used pumpkin purée.
