For their $ 28 menu I would start
of with the Crispy vegetarian rolls with taro root, tofu, carrots and woodear
mushrooms or bo la lot, la lot leaves wrapped around carlton farm flank steak and
grilled.
Whenever I have portobello or flat
mushrooms on hand I always seem to go to my default recipe - marinated in a sweet balsamic dresssing,
grilled, and then served any
of a number
of ways: sliced into chunky strips strewn over a salad, squished between a bun with lots
of toppings... When I've found a recipe I love I get it into my head that nothing else I make with that ingredient will be as good and so I stick to the tried and tested.
With Nikki we made the short drive from her house to Va La Vineyards, and then onto an organic
mushroom grower to pick up a case
of portobellos (which we would throw on the
grill later).
Grilling intensifies the flavor
of the marinated portobello
mushrooms in this recipe.
In fact, for this Pizza
Grilled Cheese, I used some
of my favorite pizza toppings — sautéed onions,
mushrooms and green peppers, pepperoni and mozzarella cheese... plus some crushed red pepper flakes for a little heat.
Definitely one
of my favorites but a turkey
grilled cheese with
mushrooms is equally as tasty.

For each salad, place a few handfuls
of mixed greens in a large bowl and top with half
of the chopped pear, avocado, walnuts, and
grilled mushrooms and onion.
With buttery pear slices,
grilled marinated red onion, and Portobello
mushrooms, toasted walnuts, and creamy avocado, it's a delicious mix
of my favorite flavors and textures, and it's filling, too.
Before a skilled chef appears tableside to perform his culinary prestidigitation on the hot hibachi
grill at Benihana, you're treated to a tasty bowl
of chicken broth - based soup with fried onions, sliced
mushrooms and green onions floating cheerfully on top.
Shake off the excess marinade and place the
mushrooms bottom side down on the cool side

I topped a bed
of spinach with a small, chopped sweet potato, a
grilled portobello
mushroom and some tempeh.
Of course you could also cook the
mushrooms and veggies on the
grill if you don't feel like turning on your oven.
A typical full day
of eating for me looks like: Breakfast: Spinach,
Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal
of the day): 4 - 5 ounces
of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted veggies and sometimes a sweet potato or butternut squash Snack: apple with almond butter or a handful
of macadamia nuts Dinner: A large salad with all kinds
of raw veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein like
grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit
of protein with it.
While the potatoes and onions are getting toasty and tender on the
grill, chop the
mushrooms and toss them with olive oil, crushed rosemary and a pinch
of salt.
Other pairings include: pork, sausage,
grilled meats, stews, game, black olive dishes, dishes with lots
of black pepper, dishes with pungent herbs, and
mushroom dishes.
After the caps are
grilled, place a spoonful
of hummus on top
of cap, garnish with parsley, sautéed
mushroom stems and red pepper.
