pie - crusts, I grew more and more enchanted with the thought

If you really want to try this recipe but don't have any frozen sour cherries on
hand, then it might work with canned cherry
pie filling by adding a tsp
of red wine, pepper, and fresh thyme to it.
The nice thing about this humble
pie, is that you can substitute any
of the ingredients out for whatever you have on
hand.
This is one
of those make ahead recipes — plus you can totally eliminate dishes with these bite size, hold in your
hand and eat as you go

Once your filling for the
hand pies is ready, cut the slab
of dough into equal sections.
As a result, the filling is more solid, which is perfect for a slab
pie intended to be eaten out

of cut into slices and served plated.
Prepare your crust and press it into the bottom
of a lightly coconut oiled 6 - inch spring form pan (I'm sure a regular

Since I only had one
pie pumpkin on
hand, I decided to use one pumpkin and one squash (which happened to be a sweet dumpling and the sweetness
of this squash went really well with the stuffing).
A simple savory tomato tarte tatin made with ripe market tomatoes, plenty
of caramelized onions, a wee splash
of balsamic vinegar, and whatever
pie dough you might have on
hand (or in the freezer)...
The first time I made this
pie (when you first posted the recipe a few years back), I pitted them all by
hand without the benefit
of a cherry pitter.
We ate some out
of hand, then I made jam, marmalade, ice cream topping, preserves, and cherry butter, but I froze 6 pounds to use in
pies.

Hand pies, jam and brie pastry bites, flaky cheese twists, fruit turnovers, or any kind
of small bite topped with delicious toppings are all fantastic choices.
Used one
pie pumpkin instead
of canned (cut in half, take seeds out, put in microwavable dish with some water and cook for approximately 20 minutes or until tender, scoop out flesh and puree with a
hand blender).
For fillings I did some with a mock mince
pie filling (
hand made by one
of my wife's aunts) and an apple filling.
I did pumpkin
pie spice in place
of the other because that's what I had on
hand.
As for today's
hand pies, I wanted to challenge myself a bit further than the average AIP, coconut - free cookie that I would typically post (though I seriously can not get enough
of making the various types
of cookies using autoimmune - friendly ingredients).
Of course, if you do not have fresh fruit on
hand, feel free to use frozen varieties, as long as that they are thoroughly thawed and drained before put into the
pies, as this will undoubtedly make them soggy.
