My first order
of business was to get my sweets covered... I decided to fashion some kind
of muffin that was
healthy enough to be
breakfast, but yummy enough that the non-vegans would also partake.
My favorite
healthy baked goods would be any veganized
muffin with whole grains; one
of my ultimate favorites that is much lower in calories than its traditional counterpart is the Gingerbread Millet
Muffin — at only 160 calories and with whole grain Millet goodness it is a
Breakfast Winner!
This one is a little different because it classifies as
healthy and is part
of my
breakfast -
muffin collection.
They still come out fine, but they do tend to have more
of a dense texture with the whole wheat flour, and the honey makes them less sweet, more like a
healthy breakfast muffin you wouldn't have any guilt eating every morning.
These gingerbread
muffins were
healthy and not too sweet, the perfect
breakfast for this time
of year when we all tend to overdo it on the sugar (the recipe was from Post Punk Kitchen).
Can you believe one
of the main ingredients in these gorgeous,
HEALTHY breakfast sausage
muffins is RICED CAULIFLOWER??? And what's even more profound is your kids (and anyone else
of that matter) will have NO idea there are vegetables hidden in them!!!
One
of my favourite things to have for
breakfast is a
