According to experts, a 3.5 ounce serving
of lean beef supplies about 40 percent
of the daily requirements
for zinc, a mineral needed to keep the immune system strong.
The filling
of course, is a deviation from a traditional spanakopita, but with the addition
of lean ground
beef for heartiness.
Today, in support
of the National Heart Month and the upcoming American Heart Association's Go Red
for Women «Wear Red Day» (Feb 7th), I got to share some
of my favorite
lean beef breakfast recipes on the Great Day San Antonio show.

of protein that's light and simple.
Key points if you like your Chili thick (ie to put in tortillas etc): - Do nt add the beer - Do nt use brisket (
lean stewing
beef instead)- Roast the butternut squash ahead
of time, before adding to dish - Cook ahead one day and then reheat
for when you want to eat it.
A few important notes
for consideration: I recommend using 93/7
lean beef because it has the right amount
of juiciness and flavor, but doesn't cause the tater tots to get soggy.
Cooking Light shared a helpful tip
for working with
leaner ground
beef: when mixing the garlic and
beef, use a [silicone] spatula, instead
of your hands, so the heat from your hands won't melt away the little fat there is.

of March and April, The Lunch Tray was dominated by the issue

beef filler made from heated and ammoniated slaughterhouse scraps and popularly referred to as «pink slime.»
In his original post on The Daily, David Knowles reported that «USDA... plans to buy 7 million pounds
of Lean Beef Trimmings from BPI in the coming months
for the national school lunch program,» and I and other media outlets shared the same information, i.e., that a purchase
of slime per se was in the works.
As many
of you know, in March, 2012 I launched on The Lunch Tray a Change.org petition seeking to remove
lean, finely textured
beef («LFTB,» more widely known as «pink slime») from the ground
beef procured by the USDA
for the National School Lunch Program.
