coconut flour instead
of buck wheat or brown rice
flour which is what I would
like to do however i'm not sure on the measurements.
Hi Donna, I've never actually tried using
coconut flour for this recipe — I imagine it would be quite dense and not have the loaf
like flavour because
of the lack
of buckwheat!
Also i have

coconut as I didn't think my kids would
like the texture.
I know
coconut flour requires a lot
of egg and that this is a custard
like food, but I think I may try it again with 6 eggs and see how it turns out.
Coconut flour needs A LOT
of liquid, it just absorbs it
like crazy.

Most
of my family don't really
like coconut flour
I take my small mesh strainer (
like this one) and I scoop
coconut flour into it and hold it over my container
of coconut flour.
On top
of that, I try to avoid any processed
flours and to be honest, I haven't found a cookie recipe using
coconut, almond, or oat
flour that I really
like.
But I have
like 4 bags
of coconut flour in my pantry just in case.
PS: was worried because
of the comments, but I had no issues with the batter falling apart
like I have with almond
flour recipes... and
coconut flour is way more tasty.
I also don't
like coconut so I added 2 more tbs
of almond
flour.
If you
like your brownies a little more cakey then add an extra 2 tablespoons
of coconut flour to the batter and bake for an extra 5 — 10 minutes.
It would be magical to substitute brown sugar or
coconut sugar, for a hint
of molasses, and you could easily swap out actual tapioca if you
like the texture, or
flour or corn starch if that's what you have on hand.
