cookie is its rarity, only available to satiated our yearlong
cookie obsession during the seasone when we're all looking for a
little break from our post-holiday diets and need some serious
cookie hoovering time.

The
cookies softened while baking so they add just a
little something extra every couple
of bites.
This is the time
of year where I'm baking
cookies every night, running to the mall to do a
little shopping, and decorating the house.
I became quite the
little cookie baker over the holiday season in 2016, and lucky for all
of us that means that I came up with all kinds
of excuses to eat healthy
cookies!
In the interest
of doing something a
little different this year... I've made some gingerbread
cookies with a stained glass candy centre.
I'm all for simple recipes that look like I spent a
little more time on them than I did, so these are definitely going on my list
of cookies to make!
But, if you want to take it a step further, try putting a
little red decorating gel on the ends
of the finger
cookies to make it look like the fingers were sliced off.
And I may have made my way back to the kitchen for a
little pinch
of cookie dough once or twice before going to bed.
The chocolate chip

cookies are a
little bit darker than usual because I used a mixture
of all - purpose flour and bread flour for a chewier crumb.

I love how these pancakes are a
little bit different and that Cassie managed to incorporate one
of my favourite
cookies too!
The addition
of the peanut butter pieces and the chocolate chips add a
little of crunchy texture to the
cookies.
These
cookies have a
little more sass than your typical chocolate chip: with a bit
of old fashioned rolled oats for added texture and chewiness, a dash
of cinnamon and a hint
of espresso powder for richness and depth, and plenty
of brown sugar for an incredibly rich, well - rounded flavor and moisture.
If you do this, you'll need to spread a
little chocolate on top
of the
cookie layer first to give the marshmallows something to adhere to.

There are just a few baked goodies that instantly remind me
of her including shortbread (made into
little thumbprint
cookies with a piece
of maraschino cherry on top), an incredible chocolate cake that was made with zucchini (and yes I knew about it!
While a
cookie oatmeal sounds super-decadent, this version has no actual
cookies in it but instead relies on the hearty flavours
of the
cookies to bring a
little breakfast magic to the table.
I never had pumpkin cheesecake before, I made this one yesterday, my husband and I just had a piece it is out
of this world, I didn't have gingersnap
cookies so I had to use graham crackers I added a
little bit
of cinnamon, cloves, nutmeg, allspice and ginger to the crust and mine did crack a
little even with the water bath, that's ok, it gets eaten anyway.
Roll the
cookie dough directly onto parchment paper (if it's sliding around a lot, a
little bit
of coconut oil or water on the backside
of the paper will help it stick to the counter better.)
Alternatively, you can store them with a
little bit
of air ventilation for a lightly crisp, snappy gingerbread
cookies.
The mixture will be a
little grainy and will flatten to cover the bottom
of the bowl in a uniform layer; it won't be light and creamy like more traditional
cookie batters.
To make this ricotta cheesecake you'll need a couple
of Oreo
cookies or any cream filled chocolate sandwich
cookies and a
little melted butter for the crust.
I wanted to create a fun collage
of cookies, so also added some monogrammed
cookies (with piped flowers similar to these cupcakes) and
little «30»
cookies.

of sparkle, and serve!
I just bought one at Target and was slightly worried it would be one
of those kitch gadgets I throw in the drawer and never see again, but I actually used it to get the perfect
little tablespoonies for these
cookies.
This helps ensure that the
cookies have a
little thickness instead
of ending up paper - thin!
When they're too dry, the dough crumbles; adding a
little bit
of lemon juice to get them to the texture
of Play - Doh makes them just right for shaping into
cookies.
One thing I did with my second round
of baking was to flatten out the
little balls so they
cookies were less fluffy and more like a regular shaped
cookie.
Correction: most girls try out new
cookie recipes, but I'm not allowed to because a few members
of the group are a
little addicted to this recipe (fine with me: these are no - bake and require 4 ingredients!).
