Asparagus is one
of my favorite spring vegetables — even better when it's
local Michigan
Asparagus!
I picked up some new crop California
Asparagus at the
local grocer to grill with a drizzle
of olive oil, cracked pepper, and a small amount
of coarse salt.
I know most
of you are probably looking ahead to spring now, but we're still at least a month off from
local asparagus and strawberries around here, so I'm sticking to this for now.
Our menu has included items such as locally sourced Niman Ranch flank steak with
asparagus and fingerling potatoes and touches
of ricotta and fried bone marrow paired with a glass
of the Ruth Lewandowski 2012 Boaz (produced by Pago's own sommelier, Evan Lewandowski), or carrots presented five different ways as a tasting appetizer with a glass
of the 2010 L'Hereu Cava, or the famous «Pago Burger» — a mix
of ground chuck, short rib and brisket in the succulent burger patty, topped high with artisanal bacon, Gruyere cheese, roasted mushrooms, pickled red onion and kale, on a toasted brioche bun slathered with black garlic aioli and Dijon vinaigrette — which has been written about at length in the
local and national press.
Some
asparagus (still in season and available locally), garlic scapes (cut fresh from my own garden), and corn (not
local, but I couldn't resist that stack
of husks - on ears).
So while our homegrown snap peas are just beginning to blossom, and
local asparagus has yet to appear in the market, the dogwood flowers are crisping in the heat, and I'm craving all kinds
of berries.
In this case adding a bit
of tang with sweet Balsamic Vinegar, crumbled goat cheese from a
local farm and some toasted walnuts proved a perfect pairing with roasted
asparagus.
This weekend I scored several pounds
of fresh
asparagus from my
local farmer's market and knew I wanted to make soup.
In addition, there are a number
of marks across specific foods to look out for such as Quality Standard Beef and Lamb, Scottish Beef, Scottish Lamb, Welsh Beef, Welsh Lamb, Mutton Renaissance, Quality Bacon Standard, Quality Pork Standard, Quality Ham Standard, Specially Selected Pork, British Pig Association, Great British Chicken, Quality British Turkey, Golden Turkey, The Lion Quality, Laid in Britain, OMSCo (Organic Milk Suppliers Co-operative) and Pasture Promise, as well as a range
of fruit and vegetable trade bodies from the
Asparagus Growers Association to The Watercress Alliance providing information on
local sourcing and supply.
I devoured white
asparagus with a delicious vinegar sauce,
local lamb with mushrooms and a thin brown sauce, cauliflower au gratin, chips,
local goat cheese, and a pancake topped with sugar for dessert (normally crepes with apple filling but they were out
of apples).
If you're not a fish fan, why not try one
of the tasty pasta dishes (particularly good when made with Istrian truffles), or some
local pork or lamb straight off the grill, perhaps with some
of the locally grown
asparagus?
When I was first invited to the Brewers Plate in Toronto two years ago, I thought they were nuts, trying to put together an event celebrating
local Ontario food before even the
asparagus was poking out
of the ground.
