Although not all the following recipes use fresh mint, we're sure the aroma and
taste of mint extract is beneficial in its own way!
Taste the mint frosting to see if you'd like to add in another 1/4
teaspoon of mint extract or if you like the taste as is.
I use 5 smashed candy canes and a few handfuls of white chocolate chips, along with a
bit of mint extract in with the vanilla.
Recently, I was
out of mint extract, so I substituted raspberry and got even more positive comments than usual!

Package a cutely labeled
bottle of mint extract, along with some homemade vanilla extract (now is the perfect time to start it too!)
4 Pomegranate Mint: Add a few drops
of mint extract into the mascarpone filling; top the tart with pomegranate seeds.

On my last mint recipe, many of you commented suggesting I use peppermint essential oil
instead of mint extract or flavoring.
PS — If you encounter any naysayers on this frosting, add 1/2 -1
teaspoon of mint extract and you'll have a delicious frosting very similar to my mint filling here.

I also love these with a few drops
of mint extract, or with the zest and 3T of the juice of an orange, or with 1/2 shot of espresso thrown in for a twist on the usual.
In place of a carton of whipped topping... I made my own mint flavored whipped cream, by adding 1/2 cup of powdered rsugar, green food coloring, and 1/2 teaspoon
of mint extract to 2 cups of whipping cream!»
Made again tonight except this time I doubled the honey and stevia (bad I know, but oh so good) and added a few drops
of mint extract.
Add a few drops
of mint extract, chocolate chips and voila... Mint Chocolate Chip Ice Cream!
Fresh mint leaves steep in fat - free milk to impart the herb's essence; the taste is much better than
that of mint extract.
Experiment with sweetener to taste, and you might even need an extra drop or two
of mint extract to make it taste minty enough.
I don't usually have mint on hand until the summer so I'm going to try this with a drop
of mint extract!
