Coconut flour is very different than
most flours so the ratios
of the whole recipe would be off.
What I especially love about it is that you can can use a 1:1 measure with
most traditional white
flour recipes, which is a nice change from the tricky nature
of coconut flour.
Coconut flour is very dry and absorbs a LOT
of moisture so it is
most difficult to replace in recipes.
The waffles are a combination
of the three
flours I use
most for all my gluten - free, paleo baking — almond
flour, tapioca
flour and
coconut flour.
I've made fried chicken with
coconut flour, but
most of the breading ends up in the bottom
of the pan, instead
of on the chicken.
Most any Paleo bread will work in this, you just have to make sure that it's using almond
flour or
coconut flour instead
of all - purpose
flour, as this will take care
of any grain concerns and will allow you to have this the traditional way.
And, on the subject
of the 2 loaves comment, I'd just like to let out a second hallelujah for
coconut and tapioca
flours being two
of the
most affordable grain free
flours to bake with.
Husband and I have gone off added sugar (I used raw honey instead
of sugar in this) and
most carbs, and these will sustain us very nicely!!!!! Seriously, I have tried protein powder pancakes (awful consistency) and almond meal pancakes (way too many carbs / calories) but there is something about the egg to
coconut flour that makes magic happen!
So what I love
most about this rendition is that it is basically 1/4 cup
of the following ingredients — palm shortening,
coconut sugar, dairy - free chocolate chips and dark chocolate, along with almond
flour and a sprinkle
of coconut flour.
I use
coconut flour in
most all my baking recipes because it delivers a huge punch
of nutrition and such a sweet, cake - like flavor; it's also lower in fat than nut - based
flours because you can use less to get the same effects.
Like
most coconut flour baked goods, these will be a little crumbly when they come out
of the oven.
You're exactly right about
coconut flour — and because
coconut flour can vary from brand to brand — the
most important part
of making any recipe is to use a bit less first, and add accordingly until the correct texture is achieved!
Coconut flour is one
of the trickiest, if not the trickiest,
most finicky, temperamental, fickle gluten free
flour to work with.

of reasons, but

coconut flour is used in place
of almond

flour, maple syrup, almond milk, and
coconut oil, these cookies take (
most of) the guilt out
of the cookie jar.
Made mostly with

of honey, this loaf
of bread has a denser texture compared to
most breads made with wheat (which contains gluten, and gives bread the texture
of bread).
MOst of the paleo baking recipes use
coconut oil /
flour and / or eggs.

With the many forms
of coconut —
flour, oil, shreds, chips, and
coconut cream concentrate — there are a plethora
of ways in which you can incorporate this deeply nourishing food into the
most important meal
of the day.
I also love that they use
coconut flour which is way cheaper than the almond
flour that a lot
of grain free / paleo recipes use and
coconut flour is also safe to send to school in my area (
most schools are nut free around here.)
In
most cases fritters are made with a
flour - based batter, but for these I made a sort
of shrimp mousseline with half
of the shrimp, some unsweetened, shredded
coconut, and some egg, and -LSB-...]
For the
flours, you could try doing more quinoa
flour and using tapioca instead
of potato starch, but
coconut flour most certainly will not work.
1.5 flax eggs (1.5 tablespoon
of flax or flax and chia (ground) meal mixed with 4 tablespoons
of water) 1 very ripe banana 1/4 cup
coconut oil 1/4 cup maple syrup (agave would work as well) 1 medium pear (grated with skin on) and place in a small colander and remove
most of the water 1/2 tsp sea salt 1.5 tsp baking soda 1 tsp ground cinnamon 1/2 c + 2 tablespoons almond or cashew milk 2 carrots, grated 2/3 cup gluten free rolled oats 1/2 cup almond meal 1 cup gluten free
flour (I used Bob's Redmill) Walnuts for topping (optional)
So, for the past couple
of weeks I've been playing around with some different recipes and decided to combine my recent pumpkin obsession with
coconut flour to create delicious, healthy muffins which —
most importantly — are also low in sugar.
Can you tell me please which brand
of coconut flour bakes up the
most fluffy baked goods?
You will notice that
most coconut flour recipes often call for a large amount
of eggs.
Even with a larger batch,
most coconut flour recipes will have small amounts
of the
flour because it absorbs moisture majorly.
That's because
coconut flour absorbs a lot
of liquid, which is why
most recipes call for a very small amount
of flour.
The nutritious and flavorful flesh
of these
coconuts is scooped out, naturally dried, and finely ground into a versatile
flour that is gluten free and has a lower glycemic index than
most traditional
flours.
I know
most nut
flours are about the same protein content, so subbing flax / almond /
coconut won't make much
of a difference.
I'm focusing mostly on working with
coconut flour pancakes and gluten - free
flours here, but
most of these alternatives can also work with regular grain
flours, as they are some
of the general measurements in baking.
Because I want everyone to enjoy this wonderful treat, I'm making this short list
of alternative ingredients that you can use instead to make your own
coconut flour pancakes,
coconut flour recipes, or
most baking alternatives in general.
Most of the time, I use various combinations white or brown rice

flour usually being the largest measurement.

As long as you have the basic paleo staples (
coconut oil, almond
flour,
coconut flour,
coconut milk, almond butter) and a well - stocked spice cabinet, you will have
most of the ingredients on hand for these recipes.
Jacki's (and now Melody's) Rich Sourdough Pancakes: 3 large farm fresh eggs 1 cup whole raw milk 2 cups
of sourdough starter (can be straight from the fridge, does not have to be recently activated... this is how I almost always make it) 1 3/4 cup all purpose
flour (makes a lighter pancake, but I've made it before with spelt
flour, which was also pretty tasty, but heavier than
most people like pancakes) 1 tsp aluminum free baking soda 2 tsp baking powder 1 1/2 tsp pink himalayan salt (you can use sea salt) 1/4 c. granulated sugar (rapadura, sucanat, whatever floats your boat) 1/4 c. raw butter, melted (I've used organic salted butter before, works fine) Also, for more health benefits, I add about 2 - 3 Tbsp melted
coconut oil, which you can use instead
of the butter or just use both (I totally use both).
It all started when I came home from Costco with the
most giant bag
of organic
coconut flour — that was actually affordable (crazy, I know!!).

of eggs.
Just saw this and miraculously had
most of the ingredients - subbed
coconut flour like the earliest commentor suggested and used almond milk b / c I didn't have yogurt.
Coconut flour tends to be one
of my favourite go - to
flours because it has such a gritty, wholesome taste and holds up quite well in
most recipes.
Add the
coconut cream and use your hands to massage it into the crumbly
flour mixture until you only have little streaks
of it at
most.
