of chickpeas and beans, tahini, raw

of my favourite snacks are pieces
of fruit / dried fruit with a handful
of nuts, veggie dippers / oatcakes with hummus, avocado with hemp seeds, home - made energy bars /
balls, chia pudding and smoothies.
Elana, Its funny you posted this... I was thinking last night about your truffle series and I was toying with the idea
of cooking the almond butter / agave mixture down a little more (from the turtle recipe) and scooping and forming it into small
balls with a cashew or hazelnut in the middle and coating them in chocolate and more chopped
nuts.

If it doesn't form a
ball of dough, add a bit more
nuts.
I've never been a fan
of protein
balls — I always find them quite stodgey and packed full
of dates and
nuts (y ’ kno, nothing too exciting) but the new bounce
balls were full
of unique and interesting flavours.
This effortless white bean dip makes a great app before a big meal, it feels substantial enough that you don't eat 10 pounds
of it before dinnertime, and doesn't have the guilt - inducing after effects
of say a
nut - covered cheese
ball.

Grind oats and
nuts / seeds in a food processor until they are finely chopped, add rest
of ingredients and whizz until it starts to come together, you may need slightly more liquid to get it to come to this stage, you want it at the texture where you can roll it into
balls.
I didn't use any pine
nuts in mine, but made two different versions with each
of the
balls — one with zaatar and extra garlic mixed into the cheese and toasted sesame seeds around the exterior, and one with sun - dried tomatoes and liquid smoke mixed in with the cheese and basil around the exterior.
However, I found that the chocolate dominated the delicate macadamia flavour so I'd suggest either using milk chocolate and more macadamia paste or simply placing a whole roasted macadamia
nut into the centre
of a
ball of ganache instead.

There should still be some chunks
of dried fruit and
nut in the mixture, but it should be sticky enough to form into
balls.
In a food processor, process the dates,
nut butter, and a pinch
of salt until a
ball of dough forms.
You can literally throw any type
of fruit or
nut in here so play about making your own energy
balls, it's certainly better than spending loads on the ones you see in a shop.
And lots
of recipes using raw buckwheat groats ground with
nuts and dates as energy
balls, raw cookies and cheesecake bases that as a grain - avoider and huge buckwheat fan I found so intriguing but if I'm honest a little horrifying.
And lastly a bit
of a miscellaneous list here
of some other sweet and savoury snacks that I have come across that use vegetables in creative ways that you may not have through
of before — think savoury «cupcakes» using vegetables instead
of fruit with a
nut spread or dip as the «icing», popcorn made out
of cauliflower and grated vegetables incorporated into tasty bite - sized
balls and slices.
Combine flour, oats, chopped fruit mixture,
nuts, cacao nibs and 1/3 cup water in a large bowl and knead with your hands until a
ball of dough forms.
