I do love it plain too, especially in a mixture
of other roast vegetables - courgette, peppers + red onion is my favourite mix.
Here we chose a colorful combination of roasted sweet potatoes and baby spinach, but feel free to swap in the same amount
of any other roasted vegetables or greens.

I then make lots
of roasted vegetables, normally this is a mix
of carrots, squash and sweet potatoes as I find these taste the most delicious cold — they seem to get more delicious stored in the fridge whereas
other veggies can go a bit soggy.

roasting in the oven and I was busy preparing the
other vegetables, the smell
of burnt plastic started oozing through the kitchen.

of them during the baking process.
Speaking
of apples and onions, when I began to prepare the brussels sprouts I realised I didn't want to just give you a
roasted brussels sprouts recipe, but to add some
other fruits and
vegetables that I love caramelised, and couldn't stop eating.
Directions: Using a mortar and pestle, or a small grinder, mix garlic, ginger and half
of the peanut oil to form a thick paste / Add
other spices, half
of the water (1/2 C) to this mix, stir together and set aside / In a sauce pan, heat the
other tablespoon
of oil to medium hot, add cumin and mustard seeds and allow them to sizzle momentarily / Add spice paste, turn heat to medium low, and while stirring, allow to cook for 1 to 2 minutes / Add cauliflower and potatoes, sweet or hot pepper if using / Stir together so that
vegetables are coated with the spices / Add the
other 1/2 C water, place a lid on, and simmer for 10 — 15 minutes, until
vegetables are tender / Remove lid and simmer for another 5 minutes / If
vegetables are done, remove them from the pan and continue to simmer the sauce until it reduces and thickens slightly — just a minute or two / Add
roasted asparagus to the bowl / Spoon sauce over winter and spring veggies, sprinkle with chives.
I on the
other hand, spent more time enjoying the food, and I distinctly remember the ginormous platers
of roasted summer
vegetables and a peach vinaigrette.
Therefore while I do love
vegetables trulymadlydeeply, and am currently obsessed with tossing
roasted, raw, and / or steamed veggies with a combination
of nutritional yeast, ground flax, and olive tapenade, I fully intend to keep up my chocolate intake throughout January (and every
other month this year).
Other: my WW adapted versions
of orange cranberry relish,
roasted orange / pineapple sweet potatoes sprinkled with a bit
of ground nuts, and
roasted root
vegetables fill the plate before I even get to tastes
of the rest.
This stuffing is slightly more labor intensive than
other recipes, since it has the added component
of roasting vegetables, but they add the best flavor and texture to these muffins.

of the foods which come to mind as possible additions.

Cumin has a powerful, unique flavor that enhances dishes like
