Yes, I nabbed a handful
of extra-soft, very late season
peaches at the market last week, and after I ate a couple I decided to sink the rest into an easy
cake for a dinner party.

I love a good coffee
cake... and think the addition
of peaches sounds great!
One
of my very favorite treats to make with fresh
peaches is this delicious

There are two amazing things going on in this recipe:
peaches + cream (a classic and forever marriage that you'll be seeing again shortly in the form
of a
cake!)
In this case should I have made
peach jam,
peach ice cream,
peach upside - down
cake, muffins, scones or all
of the above?
The top
of the
cake is then dipped into the
peach, butter rum glaze to soak in that amazing flavor.
I am not really a
peach fan, but I am a fan
of this
cake.
Layers
of sweet corn
cake, gingery
peaches and cream make a delectable departure from the traditional English trifle.
Chef Mel combines a cornucopia
of über - fresh ingredients into exquisitely delectable dishes such as Seared Rougié Foie Gras with rhubarb chutney, bacon and a slice
of peach pound
cake; Buffalo Tenderloin with bacon, roasted carrots and ancho - tomatillo sauce; and Venison Loin with baby squash, mole, foie gras and cotija cheese.
As much as we all love fruit pies, cobblers and
cakes, perfectly juicy fruit (
peaches, rosy berries, taut cherries) is often better left naked and raw, maybe spooned onto a scoop
of ice cream, a buttery shortcake biscuit or a slice
of poundcake to add a sweet and luscious note.
We've pushed the limits
of sugar - free baking by being extra aware
of the sugar we consume (natural or not) and have come up with some really delicious, EASY low sugar recipes this year (Chocolate Crack Candy, Healthy

Cake Bread being a few favorites).
But what we do have is a no - fuss, tender, sweet
cake with the delightful flavor
of fresh
peaches.
Pour any juices remaining, from
peaches, over the top
of the
cake.
Hopefully there are still a few summer
peaches available in your neck
of the woods, but if not, the sauce would be delicious over, say, grilled bananas, perhaps pears, vegan pound
cake or ice cream (or both!)

The only things I'd add are a little more
peach (maybe a small ripe one or half
of a large one) since I think the
cake can take a little more, and a full cup more
of confectioners sugar to the icing.

peach dumplings in your cook book and when I served the
cake spooned a little bit
of the hard sauce onto each slice (and topped with a bit
of fresh whipped cream).
