of peanut soup are eaten throughout Africa.
Each Afican country seems to have its own version
of peanut soup, or groundnut soup.

By ingredients, this recipe for cream
of celery root
soup is dairy - free / non-dairy, egg - free, gluten - free, nut - free,
peanut - free, soy - free, vegan, vegetarian, and all around allergy - friendly.
Pour a ladleful
of hot
soup onto
peanut butter.
Scrape
peanut butter mixture into rest
of simmering
soup, stirring to combine.
Serve the cream
of broccoli
soup in bowls and garnish with coarsely chopped toasted
peanuts and a drizzle
of extra-virgin olive oil.
I had vague memories
of having seen an African
peanut soup before and on further research, I found it would be perfect for the theme.
As with so many traditional recipes, there are many variations on the theme
of African
peanut soup.
We all loved this
soup, especially when served with some delicious fresh bread (whole wheat for extra healthy points) and a sprinkle
of cilantro and chopped roasted
peanuts for color and texture.
Serve the
soup garnished with a tablespoon or two
of roasted and salted
peanuts, some chopped cilantro, and a few squirts
of sriracha.
Quinoa
peanut soup is one
of my favorites.

All
of our
soups are made in a facility free from gluten, wheat, egg, soy,
peanuts, fish, shellfish, sesame, mustard, sulfites, and lupin.

of the like — cut up carrots, celery, zucchini, tomatoes, cucumber etc into 5 containers for morning snacks for the week (usually 1 - 2 cups)-- Measure 1/4 cups

I had an amazing vegetable
soup in Ubud which I went back for more
of the next day, and gado gado; a dish
of boiled vegetables, tofu, and egg with a little pot
of peanut sauce for dipping.
This
soup sure can be served as a main dish, but because
of the
peanut butter, it is quite high in fat.
I guess this means winter is here and I can resume my cold weather diet
of peanut butter,
soup, and hot chocolate.
