1 package Duncan Hines chewy fudge brownies 2 eggs 1/4 cup water 3/4 cup canola oil 1 generous tsp cinnamon pinch
of cayenne pepper (optional) 1
bar Scharffen Berger Nibby Dark Chocolate 1/2 cup chopped
pecans
You don't need to pair it with mini
pecan tarts or lemon
bars (with drizzles
of chocolate) to create a stellar dessert tower.
Everyone remembers the old - fashioned Magic Cookie
Bars made with a graham cracker crust, butter, chocolate chips,
pecans, flaked coconut and sweetened condensed milk... heavenly, caramelly, chocolatey yummi - ness... with a nice side
of gluten gut bomb, a sugar rush and then the inevitable crash!
My version packed the cookie crust with
pecans and whole grain flour, I used lower - fat Neufchatel cheese instead
of cream cheese in the cheesecake part, and I slathered the completed
bars with a homemade fresh cranberry glaze spiced with ginger and cinnamon.
And, depending on your taste, you might choose to make a few
of your favorite
bars multiple times rather than every recipe in the book: - I use a wide variety
of nut / seed butters throughout the book (almond, cashew, coconut, hazelnut, macadamia, peanut,
pecan, walnut, pumpkin seed, sunflower seed), but most
of them use almond butter and peanut butter.
:) I want to try baking a pan
of the crust, then topping it with chopped toasted
pecans and a drizzle
of sugar free dark chocolate, and just eating it like cookie
bars.

In the last few weeks, I have scarfed down a variety
of vegan delicacies like pumpkin cake, pumpkin pie, maple
pecan pie
bars, apple cinnamon rolls, date nut muffins, and Ben & Jerry's caramel almond brittle vegan ice cream (SO yum!).
I couldn't wait to wake up this morning and have a pumpkin
bar with maple
pecan glaze and my cup
of coffee... perfect fall morning!
