These Healthy Dark Chocolate Coconut Bites are little squares
of pure chocolate and coconut bliss.
There are lots of lava cakes out there, but our Peek - A-Boo Chocolate Truffle has a heart
of pure chocolate ganache (a rich mixture of dairy heavy cream and fine chocolate), which transforms into a most luxuriously rich molten chocolate sauce when gently warmed.

For my
Pure Fuel post today I decided to make a trail mix with a mixture
of nuts, ancient grain cereal, dried fruit, coconut flakes, and dark
chocolate covered espresso beans!
What I love about these rustic scones is they are they are very
pure of taste — there's no
chocolate chips, chunks
of Snickers, no vanilla extra or hunks
of candied ginger - there's just amazing taste and texture from the basic (but choice) ingredients.
The
chocolate extract, available from Nielsen Massey Vanilla Company is optional but does a nice job
of intensifying the
pure chocolate taste.
They're then sweetened with
pure maple syrup which adds a caramel like flavour, while the coconut oil adds a subtle touch
of tropical goodness and the raw cacao nibs add the perfect
chocolate - chip - esq crunch!
And to top it off, the raw double
chocolate ganache — a silky smooth raw dessert made
of cacao powder, dates, coconut, raisins, and pecans — was
pure bliss.
If you're one

of pure, unadulterated
chocolate, it is not happenstance.

Im my opinion, this tart has the perfect ratio
of chocolate to peanut butter, making each bite
pure bliss.
