I've made a
raw chocolate mousse - like pudding before, but the undertone
of avocado was a little strong for those who aren't used to the idea.
Chocolate Mousse 1/2 cup meat
of fresh young coconut flesh scooped from centers
of 2 avocados (see assembly instructions below) 3 tablespoons
raw cacao powder 2 tablespoons carob powder 1 tablespoon mesquite powder 1 tablespoon maca powder 5 tablespoons
raw agave nectar 3 - 4 tablespoons coconut oil 1 - 2 teaspoons vanilla extract (optional)
In honor
of Valentine's Day and all things
chocolate, though, I didn't want to miss the opportunity to share this unbelievable
raw chocolate mousse recipe with you.
One
of my all time favourite recipes to demonstrate at workshops is my
raw chocolate avocado
mousse (here).
So the idea
of a tart or cake made with my
chocolate mousse seemed pretty epic, and after a brain flash to pair it with a
raw chocolate brownie base this
chocolate mousse cake was born.
This Cashew
Chocolate Mousse Pie, made
of raw cashews and silken tofu, is rich and delicious.Yet it's healthy as well, and goes down very easy!
2 tablespoons honey (for a very bittersweet, intense
chocolate mousse, use only 1 tablespoon) 4 ounces
of 100 %
chocolate 3 tablespoons water 1 tablespoon cocoa 1/2 teaspoon espresso powder (optional) 2 pasteurized eggs or eggs that you feel you can safely eat
raw.
Chocolate Mousse 2 ripe avocado 10 Tbsp
raw cacao powder 8 medjool dates 2 Tbsp smooth peanut butter (or nut butter
of choice) 1/4 tsp pink Himalayan salt 1/4 cup coconut oil

Raw cacao butter enhances the creamy
chocolate flavour and texture
of the
mousse, as well as upping the antioxidant levels even further.
One

for the matcha lime
mousse 3/4 cup (135g) white
chocolate chips (I use these vegan ones) or chopped white
chocolate 2 teaspoons vegan gelatin or 1 ounce (30g) dried Irish moss 1/2 cup (75g)
raw cashews — soaked for 4 hours 3/4 cup unsweetened almond milk, preferably homemade zest
of 2 limes or lemons 1/2 cup freshly squeezed lime or lemon juice 1 1/2 tablespoons honey or maple syrup 1 teaspoon coconut oil 2 tablespoons matcha powder, plus more for dusting on top 2 strawberries — thinly sliced, optional
