I'm working on expanding the vegan side of my menu choices and a vegan
version of red beans and rice seemed an obvious place to remove fatty meat from my diet.
I added a chopped bell pepper and used a can
of red beans instead of one of the cans of black beans.

of red beans or some extra veggies.
