of olive oil in a 4 quart pot on the stove — the BEST tortilla
chips that stay crispy and do not turn stale if you put them in a plastic zippered bag for up to a few (yes few) weeks.

of tequila (for Juan and me — my first in my entire life, late bloomer that I am), tortilla soup with roasted pepitas — veganized from a recipe my mother got from the Mansion on Turtle Creek in Dallas — Juan's seitan mole over herbed
rice, homemade tortillas, and, for dessert, Barbara's apple - oatmeal crisp and my flan.
I have made crispy treats similar to these - with
rice puffs, peanut butter, honey and
rice syrup, and some chocolate
chips for flavor - and they set at room temp just fine (on hot days they melt in your hand, but that's part
of the fun;)-RRB-.
Cassie's Tip: There are so many ways that you could adapt this to make it your own: use milk chocolate or white chocolate
chips in addition to or instead
of the butterscotch; use
Rice Krispy's Cereal instead
of oatmeal (or any

rice crispy treats being my childhood favorite; I think I was more
of a cheesecake and chocolate
chip cookie kind
of kid.
125g margerine (dairy free if required) 140g sugar 1 egg or egg replacer (1 tablespoon
of ground flaxseed soaked in 3 tablespoons
of water till thick) 100g ground sunflower seeds (I used a mixture
of sunflower and pumpkin seeds) 50g ground linseeds 50g
rice flour 1/2 tsp baking powder 1 tsp ground cinammon (I used mesquite flour) 175g chocolate
chips (Plamil do dairy free chocolate
chips) Parchment paper
The
chips also provide 3g
of fiber and 3g
of protein per serving from a proprietary blend
of beans and brown
rice.
Serve this flavorful chunky salsa with corn
chips or in steamed corn tortillas with
rice, or on top
of salads, hash browns, or baked or mashed potatoes.
