I like the smoky flavor
of roasted bell peppers and they make a great addition to today's lettuce salad.

There are a variety
of ways to
roast bell peppers but I will show you my favourite way to
roast them.
I might also change this recipe up by using
roasted or rotisserie chicken in place
of chickpeas (as a few people have mentioned), adding cherry tomatoes, artichoke hearts, parsley, haricots verts, or
bell pepper.
I made the filling with a combination
of roasted orange
bell pepper, kumquat jelly (I'll post the recipe soon), sweet marjoram, lemon thyme, onion chives, non-pareil capers, cream cheese, blue cheese, lemon and pistachio oil.
This salad is a toss together
of delicious, earthy black quinoa, fragrant toasted hazelnuts, crunchy
bell peppers, fresh arugula and spicy,
