Instead
of the wheat
berries called for in this recipe, use leftover cooked barley from Monday's dinner to add texture to a salad
of mustard greens, arugula, and tender
roasted squash.
In a large heat proof serving bowl, toss the
roasted veggies and cooked spelt
berries with a drizzle
of cold pressed olive oil, about a teaspoon or two
of pure maple syrup, and a squeeze
of fresh lemon juice.

of the processes from pruning the trees, the hand picking the ripe
berries, washing and sun drying, grading the beans to stringent standards and the
