of roasted Delicata squash, a bit of smoked cheddar, and mole in my Delicata Squash Mole Enchiladas.
I made another pot of Greens & Ginger Soup and a big pan
of Roasted Delicata Squash Salad and was beginning to wonder about other ways to use up my haul of kale when I saw this recipe.
But something about the combination
of roasted delicata squash, toasted pecans, sweet - tart apples and a sprinkling of quinoa just works.
Italy gets a high - five in the form of lardo, draped and melted over thick rounds
of roasted Delicata squash (see the recipe).

Roasted Delicata Squash with Pecans & Cherries
I took the liberty
of changing a few things around and used what was on hand: Bob's Redmill Almond meal, fortunately the texture is excellent, 1/2 cup
roasted & mashed
Delicata Squash, one tablespoon
of Ghee, one tablespoon
of Coconut oil instead
of 1/4 cup, substituted Hemp Seed for Flax meal and Volia!
Delicata Squash arrived on my doorstep and after a brief but intense evening
of roasting and tossing and eating, I have fallen in love.
They were also good with lemon verbena infused olive oil,
roasted crescents
of delicata squash, and toasted hazelnuts (left over from this).

First,
roast thinly sliced pieces
of delicata squash for 20 - 25 minutes.
After enjoying these
roasted delicata squash rings with almonds and garlic for the past couple
of years, I decided it's time to come up with something new.
I will be using: Two red onions Handful
of Brussel sprouts 1 purple cauliflower 1 white cauliflower 1 romanesco 1/4 celeriac 1
delicata squash 4 cloves
of garlic, skins on until after
roasting, then remove Olive oil Salt and pepper to taste

of barley makes it a great choice in grain bowls with
roasted vegetables, like this one with

Roasted delicata squash has the sweetness

of the pain - in - the - neck peeling.
