My mom brought me nearly a gallon
of roasted salted pepitas (
pumpkin seeds) last time she came to visit.
I like to start with a thin layer
of Baja Sauce on a warmed tortilla followed by the
roasted cauliflower adn onion, cabbage, grape tomato halves, fresh cilantro leaves, a little more Baja Sauce, and a few
roasted pumpkin seeds with a lime wedge on the side for squeezing.
Crisp lettuce cups cradle a filling
of roasted sweet potato, sharp grapefruit nuggets, a lick
of paprika mayo and salty toasted
pumpkin seeds.
I have been searching for some inspiration
of what to do with the
seeds of all the
pumpkins I have been
roasting.
Roast in a preheated 375 degree F. oven for 7 to 10 minutes or until the

of the crust and then add the pesto,
