Once you master the most basic
of roasted veg, then you can start layering flavor.
A great plate
of roasted veg is a combination of textures, flavors, and temperatures, so every bite is different than the one before.
Did end up using all of the yogurt dressing, and next time I'd add a larger relative quantity
of roasted veg as the whole dish was orzo - intense.

For packed lunches I normally make big batches of quinoa and brown rice with apple cider vinegar / lime and salt and then do a big thing
of roasted veg — things like sweet potato and squash cubes, so I throw a mix of that into a tupperwear with some raw veg — things like avocado, grated carrot, tomatoes and then some hummus / lentils / chickpeas / seeds for protein.

The mix
of the fresh
veg with the
roasted chickpeas and sweet potatoes (which happen to be two
of my favourite foods.........) would be AMAZING.
So the grains,
roasted veg and hummus I prepare in advance and keep in tupperwears in the fridge but
of course eating the same three things everyday would get boring so I then buy a variety
of other
veg to add in each morning.

I prefer
roasted veg seasoned with different spices and this sounds so lovely...
roasted cauliflower is one
of my favourites.
Take a big «ol rimmed cookie sheet, add vegetables, some flavourful meat, a dash
of spice and salt, and bake it all up until the
veg are soft and brown, the meat is cooked and juicy, and your house smells like you spent all day — and a pile
of pots and pans — searing,
roasting and braising.
This sheet - pan dinner features turkey sausage, which I think is particularly well - suited to the sheet - pan genre because it has a whole bunch
of built - in flavour that permeates all
of the
veg roasting underneath it.
I'm clearly a fan
of veggies almost any which way but have found that when feeding slightly more
veg - sceptical people,
roasting is definitely the way forwards!
Slow -
roasting brings out the natural sweetness
of green beans, converting even the biggest
veg haters.

Yet the
roasting process intensifies the flavour
of both fruit and
veg and let's face it, some
of those strawberries sitting on supermarket shelves can do with a bit
of flavour enhancing.
Our main standbys are probably: fagioli all» uccelletto — tuscan bean / tomato / sage stew, basically posh beans on toast, very quick and easy to make from tinned beans dal - roti - shaak — any simple dal, a spicy vegetable (often
roasted cauliflower or stir - fried cabbage) and frozen parathas (which are amazing), with yoghurt and chutney on the side pasta with some sort
of veg plus feta, olive oil and lemon.
The
veg might be any combination
of potatoes, carrots, squash and onions
roasted, with any combination
of brussel sprouts, cabbage, brocolli and broad beans either steamed or tossed in melted butter in a pan until they start to blacken.
Pasta with homemade basil and pecorino pesto (made with either pine nuts or cashews), this curry (http://www.tastemag.co.za/Recipe-1177/Chickpea-and-cashew-curry.aspx) that I've made so many times that I no longer need a recipe, potato and red pepper frittata,
roasted tomato and red pepper soup with smoked paprika, veggie burgers with homemade chickpea chips, lots
of meal - sized salads (vegetarian), stirfried
veg (sometimes with tofu puffs) and peanut sauce on mung bean noodles, dahl and basmati, haloumi salad wraps,
veg green / red curry.......
Often the
veg are brocolli and fried red onion or
roast onion and fennel classic tortilla / spanish omlette noodle soup — use instant stock cubes but simmer it with star anise, soy, slice
of ginger, dried chilli, black cardamon, dried shitake etc for an hour or so before removing the spices and adding the noodles /
veg.
Roasted veg & some sort
of grain — I just throw whatever veggies we have in the oven for a while then mix them with cooked quinoa or Israeli couscous.
I am addicted to a dash
of tahini on anything... falafel,
veg burgers,
roasted veggies.
These
roasted veg are so good that they'll fulfill your fry cravings, while providing a wonderful dose
of vegetables and healthy fats!
I must admit that the first time I concocted it I had help from the prepared fresh foods aisle at Waitrose where I grabbed a couple
of trays
of pre-chopped Mediterranean
veg ready to be
roasted.
This lunch consisted
of roasted seasoned cabbage, sauteed broccoli pearls, Aldi mushroom risotto
veg burger, Chick - fil - a sauce (obsessed), and naan.
Note - in this recipe I served one portion size
of chilli with some extra
roasted veggies - I simple cut the
veg into batons drizzled over a little olive oil and some salt and pepper then
roasted for approx. 20 mins.

I based this recipe on a
roasted veg & couscous salad I used to buy from Marks & Spencers years ago and always crave this time
of year.
These days, all I want is
roasted veg and warm bowls
of goodness.

veg like asparagus on my mind and St. Patty's Day tomorrow, I thought I'd re-post a Vegan Puff Pastry Sandwich Filled with
Roasted Asparagus, Green Pea Hummus and Vegan Orange - Chipotle Mayonnaise that I created one year especially for the occasion, and a delish mint - chocolate Vegan Grasshopper Pie, kindly posted by Tofutti, that I created another year, also for this greenest
of holidays.
I added a few garlic cloves to the
roasted veg mix and served with greens on the bottom instead
of the top (I like them to wilt a bit under the hot vegetables).
We dollop it on top
of our Burrata, Peach and Grilled Vegetable Salad, but we also enjoy it with
Roasted Roots and
Veg, our #GKS Bowl or inside a waffle toastie.

The length
of time
roasting with depend on many things - the size
of the veggies you've used, the heat
of your oven, type
of pan you have, even how much water is in the
veg is a factor.
The perks
of being a cauliflower: When the
veg is deeply
roasted and drizzled with butter, there are many.
When a dinner
of cheese and butter and noodles sounds a bit too indulgent, just add
roasted veg.
It's worthwhile also buying one or two quarter - sized sheets for toasting nuts, and other small batches
of baked goods and
roasted veg.
More importantly I'm in need
of a big old health boost so earlier I grabbed all the green
veg I could think
of that would be bursting with vitamins, fibres, and plant proteins and ended up making the most incredibly tasty soup that blows our
Roasted Tomato Soup recipe out the park.
The thing is, if you aren't equipped with a convection oven at home, you're already at a disadvantage in terms
of achieving the
roasted vegetable Holy Grail: pieces
of veg with a uniformly golden - brown, crispy exterior and just - tender interior.
