I start with a double batch of Rick Bayliss» recipe for Roasted Tomatillo and Chipotle Salsa with addition
of a roasted onion.
Use this versatile oil to add a burst
of Roasted Onion for sautéing your vegetables, it is also perfect for marinating meat, fish and poultry.
Trust me when I say I would eat a whole tray just
of roasted onions.
Add about half
of the roasted onion, garlic, chilli, rosemary and walnuts.
Unlike a classic red sauce, this sauce is made
of roasted onions and tomatoes blended in the food processor.
Crushed raw onion can be applied on the forehead to reduce headaches, and a paste made
of roasted onions can be applied over boils, bruises, wounds, and scraps.

Not exact matches
The mix
of roast aubergines, peppers, courgettes and red
onion with garlic, balsamic vinegar and a plum and sun - blushed tomato pesto is a dream, especially topped with the crunchy toasted almonds.

2 Red Peppers 2 small red
onions 1 large clove
of garlic 8 mini plum tomatoes (or cherry tomatoes) 3 cooked artichoke hearts (I got mine ready
roasted from Sainsburys) a handful
of olives (green, black whatever you prefer) 2 tablespoons
of Extra Virgin Olive Oil handful
of chopped basil Splash
of Balsamic Vinegar Thyme, Rosemary, Oregano or other herbs that take your fancy Salt and pepper to season to taste
For this recipe, the carrots are
roasted to bring out their extra sweetness, and the
onions are sauteed in a mixture
of coconut oil and tahini.
To increase the taste
of rice in this simple recipe,
roasted onions and cashew nuts are also used in ghee.
I
roasted red peppers, small tomatoes, eggplant, and put that on top with chopped red
onion and cilantro and
of course, guacamole.
This version

of those in; sub out the Feta for a goat cheese or perhaps Parmesan shavings; add
roasted nuts or seeds; etc..
In this recipe, I used sweet sugar snap peas, cucumber,
roasted beets, blueberries, hemp seeds, and a teeny bit
of red
onion.
