sabayon can be made a day ahead
of time — just keep its surface covered with plastic wrap when chilling.
Drizzle each serving
of the warm flambéed lobster chunks with the Savoury
Sabayon, and grind lots
of fresh peppercorns over top.
For dessert, a maple syrup topped zabaglione (
sabayon) served in tiny crystal shot glasses, delightful with a little piece
