These Reuben - Style Irish Nachos are perfect for St. Patrick's Day: crispy waffle fries topped
with corned beef,
sauerkraut, lots
of cheese and drizzled
with Thousand Island!
You'd think the potatoes and cabbage would be the boring part, but no, the potatoes were super good,
with slightly fried bits and the cabbage was like
sauerkraut and the perfect balance
of sweet and sour.
Add 2 Tbsp
of shredded pork onto a taco
with a big dollop
of sauerkraut plus whatever toppings you like.
Nowadays, pickles and
sauerkraut are made
with vinegar instead
of the traditional method
of lacto - fermentation using salt.

I've fermented
sauerkraut in jars and in big pots, inventing weighted contraptions out
of any appropriately - sized object I could find, but what I've always dreamed about is a nice, clay fermenting crock
with custom weights that fit inside perfectly.

of year, we grill almost all
of our vegetables and serve them

Anyway, once the spaetzle was cooked we put some in a frying pan
with oodles
of butter, diced onion, already browned, rinsed and drained
sauerkraut.
DH likes them
with browned onions and cooked
sauerkraut to go
with grilled sausage... but I'm all
of a sudden thinking they'd be great browned
with some sour cream stirred in.
Generously spread the dressing on 1 slice
of bread, add 2 - 3 strips
of tempeh, about 1/4 cup
sauerkraut, more dressing, and then top
with the other slice
of bread.
Even though I'm cooking for one, I made a massive corned beef... Naturally, my latest staple developed from my leftovers: Corned Beef Reuben on pumpernickel bread,
with thinly sliced sauteed brussels sprouts in place
of sauerkraut, and melted Swiss.

sauerkraut even got rave reviews from the man who had declared his dislike
