I'm a huge fan
of slow roasted tomatoes!
I started these with a homemade sauce that came from combining some scratch tomato paste I had from leftover tomatoes this summer; adding a small jar
of slow roasted tomatoes I also had canned in the fall and infusing it with more flavour by adding fresh garlic, salt, pepper and some fresh oregano I have growing under a lamp for the winter, mixing and heating it all together in a pan.
You can easily use sun - dried tomatoes for this recipe instead but I do love the taste
of a slow roasted tomato.

In the summer, it's all about the
slow -
roasted tomatoes, eggplants and peppers served with some sort
of bread, herbs, greens and good olive oil.
Top each square with a heaped teaspoon
of tapenade and half a cherry

The summer's unusual heat and abundance
of hungry insects had promised an iffy
tomato season anyway, but, needless to say, by the end
of September, it was clear I would miss out on my yearly homegrown
tomato activities: no weekends
of steamy kitchen windows with boiling pots
of canned sauce featuring my prized Cherokee Purples; no homemade,
slow - simmered San Marzano
tomato paste; no sheet pans lining the counters with
roasted black cherry
tomatoes (the best
tomato flavor on this earth, ever).
Slow -
roasted tomatoes are one
of life's simple, great pleasures.
At the end
of last summer, I babbled on and on to anyone who would listen about the wonderful
slow roasted tomatoes I made following directions from Kalyn's Kitchen, and links from her site.

tomatos, sliced black olives, capers, fresh basil, and fresh mozzarella, all blended with a really good olive oil and some
of the
roasted garlic....
If you've never made
slow -
roasted tomatoes before, prepare to have your mind blown because they've got very little to do with the aforementioned packaged variety in all
of the best ways: they're so flavorful that you might think you think someone snuck into your oven and doused them in both vinegar and salt, even if you did neither.
Found this recipe today and immediately
slow roasted all
of my cherry
tomatoes.

Why is it that during one
of the hottest weekends
of the summer, I decided to
slow roast my surplus
of heirloom
tomatoes?
* 2 tablespoons organic butter * 1 tablespoon olive oil * 1 fennel bulb, trimmed and sliced * 3 - 4 large mushrooms, sliced * 2 cups defrosted
slow roasted tomatoes or chopped
tomatoes * 1 large handful
of herbs, chopped (if not using
slow roasted tomatoes) * 6 eggs, preferably organic and free - range * 2 tablespoons ricotta cheese - optional * Coarse sea salt and freshly ground pepper
Aside from eating them raw,
slow roasting tomatoes is my favourite way
of preparing them.
For this zucchini ribbon salad, I used a cup
of those
slow -
roasted cherry
tomatoes along with toasted pine nuts and paper - thin ricotta salata.

Typical caprese salad but
slow roasted the
tomatos in the oven, tossed it with chunks
of mozzarella, fresh basil, and drizzled with a balsamic glaze.
Inspired by my recipe for
roasted tomatoes, I decided to
slow roast all
of the veggies in ratatouille.
PASTA 3/4 lb linguine
of choice 2 tablespoons olive oil 4 cups small cauliflower florets (from about 1/2 a large head
of cauliflower) 4 - 5 cloves
of garlic, minced pinch
of chili flakes 1/2 teaspoon sweet paprika 1/2 cup
slow -
roasted tomatoes, lightly chopped or mashed (see headnote for sun - dried option) sea salt and ground black pepper 1/3 cup raw cashews, soaked for at least 4 hours 1/2 cup filtered water 1/2 cup shelled fresh or frozen peas 2 sprigs fresh basil, sliced 2 green onions, sliced 1 cup quickie vegan parmesan, divided
My dad sends big baskets
of grape
tomatoes over around this time every year and I always
slow -
roast them (using this recipe), cover them in oil, and then keep them on hand in the refrigerator for a couple weeks.
- If you don't want to
slow roast some
tomatoes for this recipe, I'd recommend replacing them with a 1/4 cup
of finely chopped sun - dried
tomatoes packed in oil.
Place a slice
of bread face down in the sauce, press well to soak up the sauce, then top with fresh
tomatoes, or these
slow roasted ones, and you have a fantastic bruschetta.
Regardless
of what
tomatoes you use, chop them into bite - size pieces, and add a lot
of garlic, olive oil and herbs, then
slow roast them for 2 1/2 — 3 hours.

When I photographed this meal I used fire
roasted tomatoes and added smoked paprika and a dash
of Chipotle chile powder to give it a bit
of slow - cooked smokey taste.
The
slow roasting intensifies their flavor, and transforms them into a caramelized
tomato jam
of sorts.
