Our favorite summer cocktail hinges on just four tiny things —
strawberries, lime
juice, black pepper and white tequila — but the combination is out
of this world.
Because the
strawberries release
juice while baking, I highly recommend shaping the mounds
of cookie dough to be taller than they are wide.
I don't think that
strawberries need a lot
of sugar per se, but
strawberries with two limes worth
of juice might.
Once the first piece was removed, the
strawberry juice began to pool in the bottom
of the pan.
We filled the bottom crust with filling, but, as the
juice from the thawing
strawberries pooled in the bottom
of the pie pan, we thought it may need something more.
Just eliminate that step in the directions, and bake the cake for about an hour instead
of 40 minutes, as the fresh, unroasted
strawberries will hold more
juice than the roasted ones do.
They release much
of their
juice and it caramelizes in the oven, turning even the wimpiest
strawberries into sticky, bright red delights, with the deep flavor to match.
